Chicken and Halloumi Burgers are a delicious family dinner. Tasty, easy, and absolutely yummy. A fantastic alternative to classic beef burgers.
I love homemade burgers. We often make pork, lamb and beef burgers and always use super simple recipes.
If anything, these chicken and halloumi burgers are easier than all of them. Made with fresh chicken breasts, they are quick, easy and cheap, but they are also juicy, a little spicy and absolutely gorgeous!
Chicken and halloumi is such a fantastic flavour and texture combination. Chicken breast and halloumi recipes are always popular in my house, and these burgers are a perfect family meal.

Why I Love Chicken and Halloumi Burgers
Sweet Chilli Chicken and Halloumi Burgers are fantastic because:

- You can add some chilli flakes if you want spicy chicken and halloumi burgers, but it’s optional.
- You can make your own peri-peri seasoning, but store-bought is perfect!
- Homemade burgers are the perfect family dinner because you can add your own toppings, sides and sauces.
- Burgers are always excellent comfort food.

Ingredients For Chicken and Halloumi Burgers
When I make my easy chicken and halloumi burgers recipe, I use:
Burger Rolls – You can make your own easy buns, but store-bought are fine.
Chicken Breasts
Olive Oil – Other cooking oils are ok, too.
Peri Peri Seasoning – Either homemade or store-bought.
Halloumi Cheese
Sweet Chilli Mayo – Get my recipe here.
Lettuce and onion to serve.
You can also add a pinch of chilli flakes if you want your burgers to be extra spicy, but this is optional. I don’t add salt and pepper anywhere. Halloumi is really salty already.

You’ll Also Need
I fry my chicken breasts and grill my halloumi cheese. So, I use a large non-stick frying pan and a baking tray.
How to Make Chicken and Halloumi – Step-by-Step Instructions
Full, easy-to-follow instructions and quantities are available in the recipe card at the bottom of this post.
Step One
Wrap the chicken breasts loosely in cling film or place them between two sheets of baking paper.

Step Two
Bash or roll with a rolling pin. They don’t need to be super flat or thin. Just flatten them out a little so that they are easier to eat and cook faster.

Step Three
Heat a little oil in a large, non-stick pan over medium heat.
Step Four
Add the chicken breasts and drizzle with one tablespoon of oil. Sprinkle over one tablespoon of peri-peri seasoning.

Step Five
Cook for 5-10 minutes on each side until the chicken is piping hot and cooked through. Add the rest of the peri-peri to the bottom when you turn.
How long this will take depends on how thick your chicken is. I recommend cutting the largest breast in half to double-check that they are cooked through. Or use a meat thermometer.

Step Six
While your chicken is cooking, grill the sliced halloumi under medium heat for 3-5 minutes on each side until golden brown. You can sprinkle with chilli flakes for more spice, but this isn’t essential.
Remove and place on a plate until needed.
You could also air fry if you have one.

Step Seven
Spread the rolls liberally with sweet chilli mayo.

Step Eight
Add a cooked chicken breast and two slices of halloumi to each roll.
Step Nine
Top with lettuce, onion and other salad of choice before the top of the bread roll.



Top Tips
My top tips for the perfect halloumi and chicken burgers are:
- Make sure your pan is nice and hot so that the chicken doesn’t stick.
- If you struggle with timing, fry the halloumi before using the same pan to fry the chicken. That way, you can see everything cooking.
- Add plenty of sweet chilli mayo.
- Don’t rush. If in doubt, cook the chicken for a little longer and cut it in half to make sure the breasts are cooked.
- Don’t worry about hitting the breasts too hard. You can’t hurt them.
- Make sure you wrap the raw breasts loosely, allowing them to expand as you squash them.
What to Serve with Chicken and Halloumi Burgers
I serve my chicken halloumi burgers with potato wedges and corn on the cob.
Other options include coleslaw, spicy rice, sweet potato wedges, chips, and salad. Basically, anything that you’d usually serve with a burger is good.

Variations
There are a few things that you could do differently to create burgers your family will love.
Chilli Flakes
I sometimes add a little chilli to my halloumi or sweet chilli mayo.
But this is totally optional.
Cooking Method
I often bake or grill my chicken breasts and sometimes fry my halloumi.
If you want to minimise energy use, I recommend baking it all in the oven.
Chicken breasts take around 15-20 minutes at 180 degrees C (fan-assisted), depending on size and thickness, and halloumi 5-10 minutes.
However you cook your chicken, make sure it’s piping hot and cooked through before serving, and return to the oven if you are unsure.
Pineapple
I love a pineapple ring with chicken and halloumi. Grill or fry for a minute or two on each side to warm before adding to the halloumi.
Sauces
I love sweet chilli mayo. But just sweet chilli or just mayo would be fine.
Feel free to experiment or even to add something like hummus.

Leftovers
If you have any leftover chicken breasts or halloumi, you can reheat the next day.
To warm in the oven, place the chicken breasts on a baking tray, cover loosely with foil and bake at 180 degrees C (fan-assisted) for 10-15 minutes, until piping hot all the way through.
You can also warm in the microwave.
Add the halloumi for the last few minutes.

Storage
Leave leftovers to cool before placing them in an airtight tub or covered bowl and in the fridge for 1-2 days. I don’t recommend keeping chicken for longer than that or reheating more than once.
Nor do I recommend keeping chicken if it was frozen before you cooked it or if it’s out of date.

These chicken and halloumi burgers are quite spicy. If you prefer a milder flavour, use less peri-peri and a milder sweet chilli sauce, and skip the chilli flakes.
Generally, halloumi burgers are made from slices of grilled halloumi cheese and any additions, in this case, chicken.
You can make chicken and halloumi burgers with skinless, boneless chicken thighs.
Chicken and halloumi burgers are fairly healthy, depending on what sauces and toppings you add and what you serve them with.
