Mushroom and Halloumi Burgers

I love halloumi cheese. Whether it’s on its own with a dipping sauce, in a salad, with pasta or on a burger, it’s such a fab flavour, and its high melting point means that it’s an incredibly versatile cheese that’s easy to work with. 

Mushrooms are another favourite. The kids aren’t as keen, so I often make these halloumi and mushroom burgers for my lunch or when the kids are having something else or eating elsewhere. 

It’s an easy, tasty recipe that you can put together in a few minutes.

What Makes These Mushroom and Halloumi Burgers Great?

This mushroom and halloumi cheese burgers recipe is fab because:

  • It’s easy!
  • You can use flat mushrooms, which are readily available.
  • The ingredients are cheap.
  • Mushrooms and halloumi cook really quickly, so it’s an ideal quick meal. 
  • The sweet chilli mayo is delicious!
  • You can serve them with homemade wedges.
  • Mushroom and halloumi is a great alternative to a veggie burger.

Ingredients for Mushroom and Halloumi Burgers

When I make my easy mushroom halloumi burgers recipe, I use:

Halloumi Cheese

Flat Mushrooms – You can also use portobello mushrooms if you prefer.

Cooking Oil – Olive oil is perfect, but any cooking oil will do.

Garlic

Mayo – I make a simple sweet chilli mayo, but you could just use either or.

Sweet Chilli

Burger Buns

Lettuce and Red Onions – Just to serve on your burgers, you can change this.

Preparing the Garlic Infused Oil

Before cooking my mushrooms and halloumi, I brush them liberally with garlic-infused oil. This gives you a lovely garlicky flavour that’s not too strong but compliments the mushrooms, halloumi, and sweet chilli mayo fantastically. 

Simply pour the oil into a small bowl and stir in the crushed cloves of garlic.

I’d leave for 10 minutes, so the oil can take on plenty of flavours, before brushing onto both sides of the mushrooms and halloumi. 

I tend to just brush the oil on and discard the garlic, but if you want a stronger flavour, you can brush some of the crushed garlic on top. 

Another option is just brushing with oil. But garlic mushroom and halloumi burgers are delicious, and it’s worth the little bit of effort. 

Making the Sweet Chilli Mayo

Mushroom and Halloumi Burgers with Sweet Chilli Mayo and Garlic sounds a lot. But the flavours really work. 

To make my sweet chilli mayo, I mix four tablespoons of mayo with two tablespoons of sweet chilli sauce.

If you don’t like this mix of flavours, I’d just use sweet chilli sauce, but mayo is fine, too. 

How to Cook Halloumi Cheese

I tend to fry my halloumi cheese in a pan after slicing it into eight and brushing it with oil.

Make sure your pan is hot before adding so that they don’t stick. 

You could also air fry the halloumi.

How to Cook Flat Mushrooms

I fry my mushrooms, too. 

You can do this in the same pan, but mushrooms can release a lot of liquid. So, if you want your halloumi to be a little crispy and golden brown, I’d either use separate pans or fry your halloumi first, adding the mushrooms once you’ve removed the halloumi. 

You can also use a griddle pan, grill, or even bake both the mushrooms and halloumi.

Building Mushroom and Halloumi Burgers

I start by spreading the top and bottom of my bun with sweet chilli mayo. 

Next, I add the halloumi, then the mushroom, before topping it with lettuce, red onion and the top of the bun. 

Rocket leaves would be great, too, but I like the crunch of a cos lettuce. 

I tend not to add tomatoes or cucumber, as mushrooms are pretty juicy, and adding other liquid can be a bit too messy!

I just use standard burger buns, but something like ciabatta rolls would be great, too. Maybe even better. 

Another option is serving mushroom and halloumi in a wrap. 

I’d spread the wrap with sweet chilli mayo and slice the mushroom and halloumi into thin strips before laying on the wrap. 

What to Serve with Halloumi and Mushroom Burgers

If you are eating mushroom and halloumi burgers as a quick lunch, you can eat them on their own or with some crisps. 

For a larger meal, I serve with homemade potato wedges or sweet potato wedges, corn on the cob and coleslaw.

Can You Save Leftover Halloumi?

Because the kids aren’t too keen on mushrooms, I might just make one of these burgers to eat on my own. 

Leftover mushrooms I just keep it in the fridge to use another time. 

But I tend to cook the whole block of halloumi and save any leftovers in a tub in the fridge to warm up in the oven for a few minutes to eat another time, perhaps as a side with another burger!

Ingredients
 
 

  • 2 Tablespoons Cooking Oil
  • 2 Cloves Garlic (Crushed)
  • 4 Tablespoons Mayo
  • 2 Tablespoons Sweet Chilli Mayo
  • 225 g Halloumi Cheese (Cut into Eight Slices)
  • 4 Large Flat Mushrooms (Stalks Removed)
  • 4 Burger Buns
  • Lettuce and Red Onion Slices (Optional, to Serve)

Instructions
 

  • Mix the oil and garlic in a small bowl and leave for 10 minutes.
  • Mix the mayo and sweet chilli in another bowl and leave in the fridge until you are ready to use.
  • Brush the halloumi and mushrooms on both sides with the garlic-infused oil.
  • Heat a large frying pan on the hob.
  • Once the pan is hot, add the halloumi and fry for a few minutes on either side until golden brown.
  • Place on a plate, cover to keep warm and set to one side.
  • In the same pan fry the mushrooms for 4-5 minutes on each side, until hot.
  • While the mushrooms are cooking, spread the burger buns with sweet chilli mayo.
  • Build your burgers, bottom bun, 2 slices halloumi, 1 mushroom, lettuce and tomato and top bun.

Notes

  • For a stronger flavour, add more sweet chilli, or a pinch of chilli flakes.
  • For a milder garlic flavour, just use the oil and discard the garlic, for a stronger flavour, use some of the garlic too.

  1. I’m non vegetarian(although my meat consumption is little nowdays) my wife is vegetarian
    But I cooked these burgers today for my wife & me
    & Honestly thought they are great & better than any meat based burger I’ve had
