I’m obsessed with traybakes. They make life easier, and I always think of them as the summer version of a casserole or stew. All the ingredients in one place, but with a summery flavour and a much shorter cooking time.

Why I Love  Air Fryer Chicken Traybake

Air fryer chorizo and chicken traybake is perfect for summer family dinners, and easy midweek dinners because:

  • It’s one of my only recipes without garlic I think!
  • Chicken and chorizo recipes have such a yummy flavour, without the need for tons of seasoning.

Ingredients For Air Fryer Chicken and Chorizo Traybake

When I make this easy air fryer chicken and chorizo traybake I use:

Red Onion

Bell Peppers – Other colours are fine too. 

Courgette

Baby Potatoes

Chorizo

Mini Chicken Breast Fillets

Olive Oil – Other oils are fine too. 

Sea Salt and Freshly Ground Black Pepper

Smoked Paprika

I don’t use liners or baking trays to make this meal, I just throw it all onto the tray. 

Aside from my air fryer, I use a mixing bowl, a large knife and chopping board and a silicone spatula to help me toss it all about, that’s about it.

It’s a super simple and quick air fryer dinner that doesn’t need any fancy equipment, however, I do always recommend using a food thermometer when you cook meat in the air fryer.

How to Air Fry a Chicken Traybake – Step-by-Step Instructions

Full, easy-to-follow instructions and quantities are available in the recipe card at the bottom of this post.

Step One

Place the potatoes, onion, courgettes and peppers in a large bowl. 

Step Two

Add most of the oil, paprika, and a good pinch of salt and pepper. 

Step Three

Toss well, until evenly covered in seasoning.

Step Four

Tip into the basket of your air fryer (on top of the crisper tray) and spread out.

Step Five

Place the chicken fillets in the same bowl and toss in the last of the oil and seasoning.

Step Six

Nestle the chicken on top of the vegetables in the air fryer basket. 

Step Seven

Sprinkle over the chorizo. The chorizo will leak lots of lovely spicy oil, which will fall under the tray of your basket. Nestling on top for the first part of the bake means that it will at least run over everything else on its way there.

Step Eight

Air fry for 20 minutes at 180 degrees C, tossing thoroughly halfway. 

Step Nine

Use a food thermometer to ensure the chicken has reached 70 degrees C in the middle before serving, air frying for a little longer if necessary.

Step Ten

Tip straight into serving bowls, carefully removing the tray from your basket when it’s empty to collect and serve any oils that have escaped the chorizo. I use a silicone spatula just to help it along, and drizzle it over our served dinners.

Serving Suggestions

I serve my air fryer chicken and chorizo traybake as it is, straight from the basket. It’s a full one pot recipe that’s got everything that you need without any extra sides or additions.

Variations

One of the best things about this style of traybake dinner, whether cooked in the air fryer or baked in the oven, is that you can add plenty of different ingredients and spices to get the meal that’s right for your family. 

Use Chicken Thighs

A Chicken thigh traybake is always lovely. 

You can use chicken thighs, either on the bone with skin, or boneless and skinless, instead of mini fillets. 

You can also use full chicken breasts. 

Just bear in mind that these will take longer to cook, so use a thermometer to make sure they are cooked before serving. 

If you are using chicken with skin, I recommend removing them before tossing and then returning to the top before air frying again. This will help the skin crisp up. 

Use Different Vegetables

My daughter loves cherry tomatoes, so we often add some for the last 5-10 minutes. You can add other veggies that you like to. 

Add Some Harrisa

Harrisa chicken traybake recipes are lovely. If you want that extra flavour, add a little Harrisa pasta instead of paprika, and toss before adding your ingredients to the air fryer. 

Add Cajun Seasoning

Cajun chicken breast air fryer recipes are lovely too. Just swap paprika for cajun seasoning.

You can pretty much try any spice blend you like to be honest!

Leftovers

This recipe isn’t particularly large for four, so you shouldn’t have leftovers. If you do, you can reheat in the microwave, air fryer or oven, using a food thermometer to make sure the chicken is cooked before serving. 

Storage 

Store your leftover air fryer chicken traybake in the fridge in a sealed or covered tub for 1-2 days.

How long does a chicken bake go in the air fryer?

Around 20 minutes, but this does depend on the size of the chicken, the space in the air fryer and the temperature. Please use a food thermometer. 

Can you put a baking tray in the air fryer?

Yes, if it fits. But the air fryer works by circulating air around the food, so it’s more effective without it. 

How long does air fryer chicken take?

Between 15-20 minutes, depending on the size, temperature, and what else you are cooking. Use a food thermometer.
