Our sweet chilli mayo is the perfect condiment for burgers, sandwiches, fries, and more. Made with store-cupboard ingredients, its creamy texture and balance of sweetness and heat will tantalise your taste buds and leave you wanting more.

I love this super simple recipe. 

It’s perfect on burgers, as a dip for fries, or pretty much anywhere else you’d use either mayo or sweet chilli.

It’s a bit spicy, a bit sweet, and a bit creamy, which for me is a fantastic combination. 

But it’s pretty much two ingredients, which are both ready-made things. Which makes me feel like a bit of a fraud. Is mixing two things even a recipe?

I think not!

So I’m also including a (very) slightly more complicated version, with three ingredients, in case you don’t have one of the first two, or you want more control over the flavour.

Ingredients

So, the big two ingredients for homemade sweet chilli mayo, are indeed:

Mayo

Sweet Chilli Sauce – you can make your own, but we always have a bottle in our cupboard. 

You can also use low, or super-low-fat mayo if that’s what you usually buy. 

Variations

If you don’t have sweet chilli sauce or don’t like the flavour that you get from mixing those two sauces, there’s another option.

For this you need:

Mayo

Chilli Flakes

Honey

I’d start with two tablespoons of mayo and add a teaspoon of honey and a pinch of chilli flakes. Taste it, and add extra chilli or honey, depending on what kind of flavour you are looking for. 

How to Make Sweet Chilli Mayo at Home

I start with two parts mayo, to one-part sweet chilli, mixed in a small bowl or ramekin. 

From here, you can taste, adding more sweet chilli if you want more flavour, or more mayo if you prefer it mild. 

You can also double (or more) the recipe if you need more to dip or spread.

If you want your sweet chilli mayo dip to be spicier, I recommend mixing in a small pinch of chilli flakes, or even a diced fresh red chilli. But taste it with the sweet chilli sauce on its own first. 

What to Serve with Sweet Chilli Mayo

I love this mayo as a dip for homemade potato wedges. 

It’s also great spread on burgers, sandwiches or wraps, or as a dip for nachos. 

You can use it pretty much anywhere you’d use mayo!

Other Easy Sauces

I’m quite into mixing two things and calling it a brand-new sauce! 

Apart from this mayo with sweet chilli, my other favourites are:

Full-fat Greek yoghurt mixed with mint sauce. This is great on chicken, pork or lamb wraps, or kebabs with salad. A lovely summery and refreshing flavour that levels up a simple meal!

I’d start with four tablespoons of yoghurt and one teaspoon of mint, mix, and add more mint to taste. 

Cajun Mayo – Two Tablespoons of mayo mixed with one teaspoon of Cajun seasoning! Great on burgers, and as a dip if you want a more complex heat, without the sweetness of sweet chilli. 

Basically, I think you can put almost anything into mayo, or yoghurt, to create an easy dipping or spreading sauce at home. Just add bits at a time, and stir well before tasting and adding more if needed.
