Chicken and Halloumi Pasta

I love halloumi cheese. It’s probably one of my favourites and it’s so wonderfully versatile. Halloumi is fantastic in burgers, with pasta, baked with chorizo and veg, or even on its own with a sweet chilli dip!

Chicken and Halloumi recipes are especially great, and there’s something about the textures of halloumi and pasta that work together really well. 

The kids have never been as keen, so I usually have halloumi cheese and easy halloumi pasta recipes when they’re eating something else, however, I introduced this as a chicken pasta dish, and they ate it all perfectly happily, so I think it’s the idea that they don’t like.

Why Chicken and Halloumi Pasta is the Perfect Midweek Meal

When it comes to midweek meals, I like them to be quick, easy, filling, and packed with healthy veggies. This halloumi and chicken pasta recipe ticks all of those boxes. 

Chicken halloumi pasta is also really colourful and tasty, and you can easily switch some of the veg to suit your tastes.

Ingredients for Chicken and Halloumi Pasta

There are no fancy ingredients in this chicken and halloumi pasta recipe, and you only really need a large frying pan and a saucepan for your pasta.

I use:

Cooking Spray – Olive oil or other cooking oil is fine too.

400g Chicken – I use mini breast fillets, either diced or whole, but diced breasts are great too. 

225g Halloumi Cheese

Red Onion

Garlic

Peppers – I use red and yellow peppers because we like them best, but any colours are fine. 

Courgette

Tinned Tomatoes

Chicken Stock – You can use veg stock if you prefer. 

Cajun Seasoning – Add a pinch of chilli flakes too if you want a bit more spice. 

Tomato Puree

Salt and Pepper

Pasta – To serve.

Can You Use Different Vegetables?

Yes, you can make easy chicken and halloumi pasta with lots of different veggies. 

We love courgettes, peppers, and onion, but you can add tomatoes, aubergines, different coloured peppers and even things like broccoli would be great. Use the veggies that you like best.

What Kind of Pasta Should You Use?

Honestly, I use whatever we’ve got in. 

Basic penne, fusilli, or even tagliatelle or halloumi spaghetti are great. 

Can You Use Chicken Thighs?

Yes, boneless, skinless chicken thighs can be used in place of breasts.

Just brown them to packet instructions, and add to the sauce to simmer, either whole, or diced. Diced is probably better.

How to Make Chicken and Halloumi Pasta?

I bake my mini chicken fillets in the oven, seasoned with olive oil spray, salt and pepper and cajun seasoning, while I’m frying my onions and garlic. 

They bake quickly, and it’s faster to do it like this than to brown it in the pan, remove and then add again once you’ve fried the veg. 

However, you can fry it in the pan to brown it first if you prefer, it doesn’t really matter as long as it’s cooked through and piping hot when you serve it.

What to Serve with Chicken and Halloumi Pasta

I serve my halloumi chicken pasta with garlic bread usually. You can also add a side salad, but there’s really no need, it’s already filled with nutrients. 

My husband also really likes bread and butter, for a pasta sandwich. Which I’ll admit, is pretty special!

Ingredients
 
 

  • Cooking Spray
  • 400 g Mini Chicken Breast Fillets (Switch to diced large breasts if you prefer)
  • 1 Red Onion (Finely diced)
  • 3 Cloves Garlic (Crushed)
  • 1 Red Pepper (Deseeded and diced)
  • 1 Yellow Pepper (Deseeded and diced)
  • 2 Courgettes (Chopped into small cubes)
  • 225 g Halloumi Cheese (Chopped into cubes)
  • 400 g Chopped Tomatoes
  • 250 ml Chicken Stock (Made with 1 stock cube)
  • 3 teaspoons Cajun Seasoning
  • 1 Tablespoon Tomato Puree
  • Pinch Salt and pepper
  • Pasta for four (to serve)

Instructions
 

  • Season the chicken with a pinch of salt and pepper and a teaspoon of the Cajun seasoning.
  • Brown in the oven, to packet instructions.
  • While the chicken is baking, mist a large frying pan with cooking spray over a medium heat on the hob.
  • Add the onions and fry for 5 minutes until soft, stirring often.
  • Add the garlic and fry for a further 2-3 minutes.
  • Stir in the cubes of halloumi and cook for 2 minutes, continuing to stir regularly.
  • Add the peppers and courgettes and stir in well.
  • Add the baked chicken, whole or diced.
  • Pour in the tomatoes and stock and stir.
  • Add the rest of the Cajun seasoning, the tomato puree and a pinch of salt and pepper.
  • Bring to a simmer.
  • Reduce the temperature and simmer for 20 minutes, stirring occasionally.
  • Cook the pasta to the packet instructions while the sauce simmers and serve together.

Notes

  • I brown my chicken in the oven so that I can save time and fry the onions, garlic, and peppers while it cooks. You can fry it in a pan if you prefer.
  • If using mini fillets, you can either leave them whole or dice them.
  • Simmer for a little longer if your sauce is still too thin and add a little water if it is drying out.
