Mushroom and Halloumi Spaghetti

Do you ever have one of those days when you really want to eat something? But you’re not sure what to do it with? Well, this week I bought a block of halloumi from Lidl. I desperately wanted halloumi for lunch so scoured the fridge and cupboards for something to do with it and then, Mushroom and Halloumi Spaghetti was born. It was fantastic and something I’m sure to make again in the future. Especially seen as it took about 15 minutes!

I don’t know what’s going on this week but I’m having a proper pasta binge, I’ve had it most days and never feel like I’ve had enough. Perhaps all the moving stress means I need carbs! I love pasta though, so it’s fine. I was originally going to do my quick and easy Mushroom and Halloumi Spaghetti with just a little sweet chilli sauce but then I remembered we had a little sour cream dip left from some crisps, which was likely to just get thrown away. It made an amazing sauce.

  • 100g Halloumi cheese
  • 90g Closed cup mushrooms
  • 0.5 Red Onion
  • 3tbsp Sour cream
  • Pinch salt and pepper
  • Spaghetti (I’m terrible at measuring spaghetti…is it about 75g per person?)

I’ve put closed cup mushrooms because that’s what we had in, but I’m sure any others would work equally well.

Firstly, cook your spaghetti to the packet instructions. This normally takes about 12 minutes, so start preparing the rest too and it should all be ready at the same time.

Chop the mushrooms and red onion and slice the Halloumi before cutting into squares.

Lightly fry these in a little oil until soft.

Then, add the sour cream and mix together well.

Around now, your spaghetti should be ready. Drain, retaining around 50 ml of the cooking water. Pour the spaghetti and water into the frying pan with the halloumi, mushrooms, cream and onion. Mix together well.

Finish with a pinch of salt and pepper and serve immediately.

Seriously, that’s it. This Super Simple Mushroom and Halloumi Spaghetti makes the perfect quick meal and means you get to eat halloumi without just grilling the whole block for a snack…which I have never done. Perfect!

  • 100 g Halloumi
  • 90 g Closed cup mushrooms
  • 0.5 Red Onion
  • 3 tbsp Sour Cream
  • Pinch salt and pepper
  • Spaghetti


  • Cook the spaghetti to pack instructions
  • Chop the halloumi, mushrooms and onion
  • Fry these in a little oil over a medium heat for a few minutes until softened
  • Add the sour cream and mix together well
  • Drain the spaghetti, retaining around 50ml of the cooking water
  • Add the spaghetti and water to the frying pan
  • Add a pinch of salt and pepper, mix together until spaghetti is well coated and serve immediately
