Why I Love Turkey Fajitas
I adore all of the fajitas, but these have something extra special:
- Mexican recipes are fantastic for families. They can add their turkey mixture and pick the veggies, dips, and sides they want. It’s really social eating and a fantastic way to get kids to try new flavours. Mexican is fun!
- Turkey is Low in saturated fat, making it ideal if your summer clothes from last year don’t fit this year. Or is that just me?
- You can stir-fry cook turkey in no time, and I like crunchy veg, so this is a super quick turkey recipe.
- Fajitas are quick, easy and delicious.

Ingredients For Turkey Fajitas
One of the best things about Mexican meals like fajitas is that there are tons of options. When I make this turkey fajitas recipe, I use:
For the Fajita Spice Mix
Paprika
Oregano
Coriander
Cumin
Chilli Powder
Salt and Black Pepper
This is the same spice mix I use for all of my fajitas and things like fajita pasta and traybake.
For the Fajitas
Olive Oil – Other cooking oils are fine, too.
Turkey Steaks – You could also use turkey breasts, but steaks are cheap, lean and easy to slice.
Red Onion
Peppers
Garlic Puree
Lime – Juice only.
Tortilla Wraps – I use white wraps, but best of both, wholemeal, seeded or any others are fine too. Use corn or flour.
Salad, Grated Cheese and Dips – I add grated cheddar cheese, guacamole and sour cream to my fajitas. Salsa is great, too.

You’ll Also Need
I make my easy turkey fajitas in a large, non-stick frying pan, but any heatproof cooking dish is fine.
You also need some foil to wrap your tortillas, a small bowl for the spice mix, a chopping board, a sharp knife and a spatula.
How to Make Turkey Fajitas – Step-by-Step Instructions
Full, easy-to-follow instructions and quantities are available in the recipe card at the bottom of this post.
Step One
Slice the turkey and veggies into nice thin strips.
Step Two
Mix the spices and salt, and pepper in a small bowl and leave to one side.

Step Three
Warm the oil in a large, non-stick flameproof pan or dish over medium heat on the hob.
Step Four
Add the sliced turkey and fry for 5-10 minutes until browned, stirring often. If your strips are thin, they should cook fairly quickly.

Step Five
Add the onions, garlic, and peppers.
Step Six
Fry for 5 minutes, stirring often.

Step Seven
Add the spices and lime juice and stir in well.

Step Eight
If it’s dry, add a splash of water. You might not need this, depending on how juicy your vegetables and lime are and how juicy you want your fajitas. If you add a little, make sure it’s just a splash.
Step Nine
Cook for 5 minutes, stirring often to ensure the spices are evenly mixed. Slice a larger piece in half before serving to ensure the turkey is cooked through. Cook for a little longer if necessary.

Step Ten
While this is cooking, wrap the wraps in foil and warm in the oven for 5 minutes at 180 degrees C (fan-assisted).
Step Eleven
Carefully open the wraps and build your fajitas with cheese, turkey, vegetables, and dips like guacamole.

Wrap tightly and serve.

Serving Suggestions
We typically serve our fajitas with turkey with simple sides like salad, med veg, rice, potato wedges or fries.
I like to put the fajita mix on the table in a big bowl, with dips, salad and sides in bowls around it. Then everyone just picks what they want and builds their own wraps. The kids love this type of eating.

Variations
Firstly, my fajita mix is mild. If you want it spicier, add more or use hot chilli powder.
Use Your Air Fryer
Air fryer turkey fajitas are delicious and a great alternative to frying.
To air fry your turkey fajitas, toss the turkey, onions and peppers in oil, spice mix and lemon juice and preheat your air fryer to 200 degrees C.
Tip the meat and veg into your air fryer basket and air fry for 15 minutes, shaking the basket halfway through.

Skip the Lime Juice
Lime juice adds a lovely fresh flavour, but if you don’t like it or don’t have a lime, skip it and replace it with a splash of water.
Use Leftover Roast Turkey
Leftover turkey fajitas are a fantastic way to use leftover meat.
To make Leftover roast turkey fajitas, slice your meat, and add it to the pan with the onions and peppers.
I recommend using a food thermometer to make sure the meat is over 75 degrees C before serving.

Turkey is very lean, making it popular for anyone looking to reduce the fat in their diet or cut calories.
If you want to take that a step further, you can serve a turkey fajitas bowl without the wrap or with lettuce wraps, skipping the turkey fajita wraps.
Turkey fajita recipes are great for very healthy, low-fat dinners.
Leftovers
Any leftover fajita spice mix can be covered and kept in a dark place with your other spices.
Leftover turkey fajita filling can be reheated in the air fryer, microwave, or pan on the hob. Add a splash of water so the meat doesn’t dry out, and make sure the meat is over 75 degrees C before serving.

Storage
Remove leftovers from the cooking pan and cool in a clean tub. Once cool (and within 2 hours), cover and refrigerate for up to two days, as long as the turkey is in date.
