Air fryer roasted vegetables are lovely. Roasted med veg is delcious. This is a combination of the two. If you love fresh, colourful vegetables and Mediterranean recipes, you should definitely give these Air fryer veggies a try!

We often add chicken and chorizo to this recipe for an easy tray-bake dinner. But you can also cook it as it is and serve it either as a full meal, with some bread and dressing, or serve it as a side dish at a BBQ, or with a summery family dinner like my chicken and halloumi skewers.

Why I Love Air Fryer Mediterranean Veggies

I love air fryer roasted Mediterranean vegetables because:

  • Mediterranean roast vegetables are so colourful. They make a lovely addition to any table. 
  • So many different veggies mean lots of nutrition with different minerals and benefits. 
  • They’re super juicy and tasty, ideal for summer dinners. 
  • The whole family can pick the bits that they like, and you can easily add different ingredients and flavours.

Ingredients For Air Fryer Med Veg

Air-fried meg veg is quite personal. Make sure you use the vegetables that you like! As a guide, I use:

Baby Potatoes – Salad or new potatoes are fine, too. Just little potatoes!

Courgettes – Zucchini if you’re American. Why does that have such vastly different names? 

Bell Peppers – I usually use red or yellow, but any colours are fine. Use what you’ve got or what you like. 

Red Onion

Vine Cherry Tomatoes — I just think they look fabulous on the vine, but they’re okay off the Vine, too. 

Olive Oil — Extra virgin olive oil is best. But if, like me, you aren’t a millionaire, use the cooking oil you have. 

Oregano

Smoked Paprika 

Sea Salt and Freshly Ground Black Pepper — Normal table salt and black pepper will do if that’s what you have.

You’ll Also Need

Apart from your air fryer, you need a chopping board, sharp knife, and mixing bowl to toss the ingredients in oil. 

A silicone spatula can be ideal for tossing, but you can just shake the basket. 

That’s all you need to cook veggies in the air fryer. 

How to Air Fry Mediterranean Vegetables – Step-by-Step Instructions

Full, easy-to-follow instructions and quantities are available in the recipe card at the bottom of this post.

Step One

Chop the vegetables and slice the potatoes into thin rounds. If you want them thicker, they’ll need either par-boiling or air frying for a while before you add the other ingredients.

Step Two

Place the potatoes, peppers, courgette and onion in a large mixing bowl.

Step Three

Add the oil, paprika, oregano and salt and pepper.

Step Four

Toss until all vegetables are coated in oil and the seasoning is evenly distributed. I do this with my hands. You can add more oil and seasoning if you want to.

Step Five

Tip into the air fryer basket. 

Air fry at 200 degrees C for 15 minutes, tossing well every 5 minutes. I do this by just giving the basket a really good shake, but you can use a silicone spatula if that’s easier.

Step Six

After 15 minutes, toss again and nestle the tomatoes on top.

Step Seven

Air fry for five more minutes.

Step Eight

Make sure the potatoes are cooked before serving straight from the basket.

If they aren’t, I recommend removing the tomatoes before air frying any longer.

Step Nine

Once you’ve removed everything from the basket, if any veg has slid below the tray, carefully ease it out, using silicone tongs or finger covers, and scoop any veg out. Remember, the basket and tray will be very hot, so don’t use your fingers.

Serving Suggestions

This Mediterranean vegetable medley can be served in a variety of ways. 

Air Fryer Mediterranean Vegetables as a Meal

As a full meal, this air fryer vegetable recipe will serve 2 to 3 people. 

I’d add some crumbled feta cheese for extra flavour and texture and maybe a little lemon juice or balsamic vinegar.

Serve as a Side

This recipe will serve four people as a side dish or as part of a traybake-style dinner. For a simple summer dinner, you could serve it with burgers, wraps, Greek flatbreads, or other Greek recipes, or with seasoned chicken breasts and chorizo slices (which can also be air-fried). 

This air fryer Mediterranean vegetables could make a fantastic BBQ side dish recipe if you’re having a BBQ.

Variations

This recipe for air-fried Mediterranean vegetables is really just a guide. There are absolutely loads that you could do differently. 

Skip the Potatoes

Potatoes are more of a meal or a more filling side dish. But if you prefer, skip them entirely and reduce the air frying time by 5 minutes. 

Add Some Spice

I’ve gone for a classic oregano flavour with a hint of smoked paprika. Add more paprika, chilli, or cayenne pepper if you prefer more spice. 

You could also experiment with cajun or peri-peri seasoning. 

Change the Veg

If you don’t like onions, skip them. The same goes for courgettes. You could also add squash, carrots, or green beans. 

We like a med veg because we all like different things. My daughter tends to get loads of tomatoes but not many courgettes. My son doesn’t like cooked tomatoes, so we keep him a few cold. It’s great for different tastes.

Leftovers

Leftovers can be reheated in the air fryer, microwave, or oven. Cook at a reduced temperature (around 150 degrees C) for around 10 minutes in the air fryer. The exact time will depend on how much you have left. 

Storage 

Place leftovers in a clean tub or bowl, cover or seal, and refrigerate for up to two days.

Instructions

Notes

Add a little more oil if necessary.
I recommend slicing your potatoes thinly, no more than 3-4mm thick, so they cook. If thicker, parboil or air fry for 5-10 minutes before adding the vegetables.
If your potatoes are still too firm after 20 minutes, remove the tomatoes before air frying for longer.
I don’t cover the tray of my air fryer basket, meaning some thinner veg bits can slip under. If this happens, carefully remove the tray once you’ve tipped out the other veggies to scoop them out.
