The fajita spice mix I use in this recipe is the same as the one I use for my fajita pasta and traybake. It’s pretty spicy but not too spicy, and it has an authentic, lovely, deep flavour.
It’s delicious, so obviously, I also use it on actual fajitas!
Air-frying fajitas is super quick and easy. You only have to shake the pan once halfway through, so it’s a lazy meal!

Ingredients For Air Fryer Chicken Fajitas
When I make my chicken fajitas in the air fryer, I use:
Paprika
Oregano
Coriander
Cumin
Chilli Powder
Salt and Freshly Ground Pepper
Olive Oil – Other cooking oils are fine, too.
Chicken Breast Mini Fillets – You can also use full skinless chicken breast sliced into strips.
Bell Peppers – Any colour. I prefer yellow and red bell peppers. I don’t like green bell peppers as much, but you do you.
Red Onion

In addition to your air fryer, you just need a sharp knife and chopping board, a small bowl, a mixing bowl, and a spoon to mix it all.
I air fry my fajitas directly on the crisper tray of my air fryer. The veg is chunky, so it doesn’t fall through the holes (and if it does, you can just get it out later), and it cooks really well.
It means you need to wash the tray, but nothing should stick.
You can air fry in a cooking dish, but I don’t think it’s necessary.
Once cooked, I just tip the basket into a bowl to serve, so there’s no need for a silicone serving spoon or tongs.

How to Air Fry Chicken Fajitas – Step-by-Step Instructions
Full, easy-to-follow instructions and quantities are available in the recipe card at the bottom of this post.
Step One
Preheat the air fryer to 180 degrees C and set for 15 minutes. If your air fryer doesn’t have a preheat setting, just set it for 17 minutes and add the food after two.
Step Two
Mix the paprika, oregano, coriander, cumin, chilli powder, salt, and pepper in a small bowl.

Step Three
Place the chicken strips, peppers and onions in a large mixing bowl.
Step Four
Pour over the oil.
Step Five
Sprinkle on the spice mix.
Step Six
Mix well.

Step Seven
Tip into the preheated air fryer basket on top of the crisper tray. Shake to spread evenly. It’s okay if it overlaps a little (it will unless your air fryer is massive), but try to get as even a layer as possible.

Step Eight
Air fry for 15 minutes, tossing well halfway through.

Step Nine
Make sure the chicken is cooked through (I recommend using a food thermometer or at least cutting a big bit in half to make sure the centre is cooked and piping hot), and air fry for a little longer if needed.

Step Ten
Serve on wraps with cheese, salad and dips of choice.

Serving Suggestions
I serve my fajitas on tortilla wraps with cheese, salad, soured cream, salsa, and guacamole.
This recipe is really only enough for one fajita each, so we usually add some sides like rice, salad, corn on the cob, wedges, fries and coleslaw.

Variations
Use Chicken Thighs
You can use any boneless skinless chicken. If you prefer thighs, make sure they are boneless skinless fillets and chop them into strips or chunks.
Adjust the Spice Level
You can use more chili powder or add a pinch of cayenne pepper for spicier fajitas. Or reduce the chilli if you want a milder flavour.
Use Store-Bought Seasoning Mix
Making your own seasoning is super easy and well worth it. But you can buy a pack if you prefer.

Leftovers
This isn’t a massive portion of fajita filling, so you might not have any left.
If you have, you can serve it the next day as a chicken wrap or on a salad.
Reheat leftovers using the reheat setting on your air fryer or microwave until the chicken is piping hot. This could take up to 10 minutes.
Storage
Place cold leftovers in a clean tub and cover. Keep in the fridge for up to two days.
