If you’ve followed me for a while, you’ll know I love Mexican food and often use fajita spice mix for other things. 

I love the flavours of Mexican food, such as fajitas and enchiladas, but I also love the more social style of eating. 

When we eat things like tacos, we put all the fillings, dips, and sides on the table to help ourselves. 

The kids love it, and when they were younger, it was a great way to get them to try new flavours and textures. It’s something we’ve all really enjoyed!

My simple fajita spice mix is something that I use not only on air fryer fajitas but also on things like traybake and even pasta dishes. 

It’s easy, it has a lovely flavour, and you can easily adjust the heat level. 

It’s also perfect for homemade potato wedges, adding a little heat and plenty of flavour for yummy wedges that are the ideal air fryer side dish!

Why I Love Air Fryer Fajita Wedges

I love fajita wedges because:

  • The spice mix is easy to make. You can even use leftover spice from last night’s fajitas if you want to!
  • You can make them spicy or mild. 
  • It’s a fantastic flavour that works really well with homemade wedges. 
  • You can make fajita potato wedges in the air fryer as I do here, or you can bake them in the oven.
  • Wedges are a great alternative to chips or fries, and being able to add different spices and herbs means that you’ll never get bored. 
  • Wedges are one of my favourite air fryer recipes, no matter what I put on them!

Ingredients For Fajita Wedges

I use the fajita spice mix I use for other fajita recipes. It’s easy, yummy and tastes fairly authentic. I use:

White Potatoes – Potatoes like Maris Piper or King Edwards make the best wedges. Crispy on the outside, fluffy in the middle!

Olive Oil  – Other cooking oils are fine, too. Use what you’ve got.

Paprika

Oregano

Coriander

Cumin

Chilli

Salt and Pepper – I use sea salt and freshly ground black pepper.

You’ll Also Need

If you don’t have an air fryer, you can bake your potato wedges with fajita spice in the oven. I recommend my cajun wedges recipe as a guide.

If baking in the oven, I recommend A large baking tray and greaseproof paper. 

However you bake them, you’ll need a chopping board, a sharp knife, a colander, and a large mixing bowl. 

How to Air Fry Fajita Wedges – Step-by-Step Instructions

Full, easy-to-follow instructions and quantities are available in the recipe card at the bottom of this post.

Step One

Cut the potatoes into six to eight long wedges and place them in a large mixing bowl.

Step Two

Cover with hot water. It shouldn’t be boiling, just hot to touch. 

Step Three

Leave to soak for 15 minutes.

Step Four

Mix the spices, salt and pepper in a small bowl.

Step Five

Drain the potatoes thoroughly and tip onto a clean towel in a single layer.

Step Six

Leave to air dry for 5 minutes and dab off any excess water.

Step Seven

Preheat your air fryer to 200 degrees C and set for 30 minutes.

Step Eight

Return the potato wedges to the dry mixing bowl and pour in the olive oil.

Step Nine

Add the spices and toss until the potatoes are well coated in oil and spice mix. You’ll be able to see the spices. 

I use my hands to do this, which is effective but messy.

Step Ten

Remove the air fryer basket and add the potatoes to the crisper tray in one layer.

Step Eleven

Place in the air fryer and cook for 15 minutes.

Step Twelve

After 15 minutes, remove the drawer and shake well to toss the potatoes. If any seem stuck, give them a poke with a silicone spatula. 

Step Thirteen

Return to the air fryer and reduce the temperature to 180 degrees C for the final 15 minutes.

Step Fourteen

Ensure the potatoes are soft in the middle and return for a few more minutes if necessary.

Serving Suggestions

Fajita spiced potato wedges are the perfect side dish. 

Serve fajita potato wedges with your favourite tacos, burritos, or things like burgers

You could even serve potato wedges with fajita seasoning and a simple sandwich or toastie to create a filling meal.

Variations

There are a few things that you could do differently when you make air fryer fajita wedges. 

Change the Spice Level

You can easily adjust the spice level by adding more or less chilli or a teaspoon of cayenne pepper to kick up the heat. 

Use Store-Bought Spice Mix

Making fajita seasoning is super simple. However, you can also use store-bought mix or leftovers from a fajita kit if you prefer. 

Use Store-Bought Wedges

If you have some frozen potato wedges in the freezer, toss them in a little oil, toss in the seasoning, and then bake or air fry them according to the package instructions.

Leftovers

Reheat leftover air fryer fajita wedges in the air fryer at 180 degrees C for around 10 minutes, depending on how many you’ve got.  

Storage 

Keep leftover air fryer potato wedges in the fridge for up to three days.
