Ingredients For Halloumi Fajitas
I make my own fajita spice mix using:
Paprika
Oregano
Coriander
Cumin
Chilli Powder
Smoked Paprika
Pinch Salt and Black Pepper

Then, to make my halloumi fajita recipe, you also need:
Cooking Spray – Or olive oil.
Halloumi Cheese
Red Onion
Bell Peppers – Use your favourites.
Garlic Puree – Or fresh garlic. But I’m lazy! Garlic powder is another option.
Lime Juice – Fresh or bottled.
Tortilla Wraps
Dips to Serve – I add soured cream, salsa and guacamole. I add grated cheese, too, but I can see that cheddar on halloumi might not be for everyone.

You’ll Also Need
To make this recipe for halloumi fajitas, you will also need a sharp knife and chopping board, a large non-stick frying pan (affiliate link), and some foil to wrap the fajitas. A spatula to stir and a serving spoon are also useful.
How to Make Halloumi Fajitas – Step-by-Step Instructions

Step One – Make the Fajita Spice Mix
Mix the paprika, oregano, coriander, cumin, chilli, smoked paprika and salt and pepper in a small bowl and set to one side.

Step Two
Slice the halloumi into strips or fingers. Slice onion and peppers, too.
Step Three
Mist a large, non-stick frying pan with cooking spray and warm over medium heat on the hob.
Step Four
Add the halloumi and fry for a few minutes on either side. How crispy you make it is up to you. I just lightly brown mine.
Step Five
Remove from the pan and place on a plate.

Step Six
Add the onions to the same pan.
My pan generally needs a rinse and wipe and a fresh spray of oil once I’ve taken the halloumi out.

Step Seven
Fry for 5 minutes until starting to soften, stirring often.
Step Eight
Add the garlic and peppers.

Step Nine
Fry for 5 minutes, stirring often. If you like your peppers really soft, fry for longer.
Step Ten
Add the lime juice (use more if your lime is small) and halloumi and stir well.
Step Eleven
Add two tablespoons of the fajita spice mix or more for a stronger flavour, and stir together well.
If it is too dry, add more lime juice or a small splash of water to help you mix in the spices. I tend to add some water, but just enough to make it easy to mix the spice mix through.

Step Twelve
Cook for 5 minutes, stirring often, until the halloumi is hot and everything is coated in spice.
Step Thirteen
While this is cooking, wrap the wraps in foil and warm in the oven for 5 minutes. You can also microwave them for a few seconds.

Step Fourteen
Fill the warm wraps with halloumi strips, peppers and onions, and dips of choice and wrap. Serve immediately.

Top Tips
This recipe is super easy, so I don’t have many tips.
- Get the pan nice and hot before you add the halloumi. This will stop it sticking and help you get that lovely golden colour.
- If any does stick, rinse your pan out before you add the onions.
- Cook to suit your tastes. If you like to keep your onions and peppers crunchy, don’t fry for as long. Fry for longer if you want them soft.
- I find thin fingers of halloumi easier to wrap.
- You can make this recipe with mini wraps, too.

What to Serve with Halloumi Fajitas
I serve my halloumi fajitas with typical Mexican-style sides.
Tortilla chips are great and give you a way to use up leftover dips! Other fantastic options include rice, salad, corn on the hob, and potato wedges.

Variations
Halloumi fajitas are easy, and it’s easy to make a few changes if you want to.
Add more chilli powder or a little cayenne pepper if you want spicy halloumi fajitas.
You can also use more or less spice mix.
If you like wetter fajitas, add either more lime juice or a splash of water.
Add sliced chicken breasts if you want chicken and halloumi fajitas. Brown this in the pan and remove before adding the halloumi. Return with the halloumi and cook until the chicken is piping hot and cooked through.
The main variation to any fajitas is what you put in them. You could add courgette if you wanted, use different coloured peppers, and add different dips and sauces. Black beans and mushrooms are popular additions to veggie fajitas, too. Experiment with your favourite things!

Leftovers
If you have any leftover fajita spice mix, you can use it for pasta or traybakes or in other Mexican-style dishes like burritos or halloumi tacos.
Leftover halloumi fajita filling and veggies can be reheated in a pan with a bit of oil, cooking spray or water for about 5 minutes. Or in the oven, cover the tray loosely in foil and bake for about 10 minutes.
Serve with tortillas again or with pasta, wedges, or rice for another filling dinner. If there’s not much left, add rice to your wraps for cool halloumi burritos.
Storage
Store leftover halloumi fajitas in the fridge in a sealed tub for 3-4 days.
You can also freeze in an airtight tub for up to two months. Thaw overnight in the fridge before reheating.
