Halloumi and Couscous salad is tasty, juicy and full of flavour. It’s the perfect lunchtime salad that’s ready in a few minutes.

I love salads, but they can be a bit boring if you don’t start adding different tastes, textures and colours. 

This recipe for halloumi couscous salad is tasty, but it’s also really quick and easy, and while this recipe makes 2 portions of couscous and halloumi salad, you could easily make it bigger or smaller. 

I often make this recipe with less lettuce, tomato and cucumber and save half of the dressing, couscous, courgette and halloumi for the next day if I’m having lunch alone. It all reheats really well, so just pop extras in a tub in the fridge.

Why I Love Halloumi Couscous Salad

I love this Summer couscous salad because:

  • Courgette salad recipes are brilliant. Courgette is juicy and soft, making it perfect in summer salads. 
  • Halloumi is one of my favourites, but I’m never sure what to do with it!
  • The honey and lemon dressing is a small portion, so you don’t need to worry about bottling and saving any. 
  • This halloumi couscous salad recipe is quick and easy. 
  • It’s packed with flavour, colour, texture and nutrition, everything a salad recipe needs. 
  • You could easily add some chicken if you wanted to, but I don’t think it needs it.

Ingredients for Halloumi and Couscous Salad

You can change the base for your salad if you want (different leaves, for example), but when I make my halloumi and couscous salad with courgette, I use:

Romaine Lettuce

Cucumber

Cherry Tomatoes

Instant Couscous – I use something like roasted vegetable flavour, which goes with everything. 

Cooking Spray

Courgette

Halloumi Cheese

And for the easy honey lemon salad dressing, I use:

Olive Oil – Extra virgin olive oil is great if you have it, but any old oil will do!

Fresh Lemon Juice

Honey

Salt and Pepper

Can You Add Red Onion?

Yes, finely sliced red onion would be a great addition. 

Can You Use Store-Bought Dressing?

If you want to, of course. I tend to just make my own, though. It’s easy, and you can just make as much as you need. It also means you can adjust the flavour to suit your tastes.

Can You Skip the Courgette?

This is a Courgette couscous and halloumi salad recipe, and the courgette is perfect with the halloumi. But if you don’t like courgette, you can skip it.

Can You Make Your Own Couscous?

Yes, of course. Make it to packet instructions with vegetable stock. 

But I always have a few packs of instant (or express) couscous in my cupboard. They are tasty, easy to make and cheap. 

How to Make Halloumi and Couscous Salad – Step-by-Step

Salads, in my opinion, should always be quick and easy, and this one certainly is. You can also get the full instructions and quantities in the recipe card at the bottom of this post.

Step One – Make the Dressing

Mix the oil, honey, lemon juice, and a pinch of salt and pepper in a small bowl. Leave this in the fridge until you need it.

Step Two – Make the Couscous

Make the couscous with boiling water according to packet instructions and leave it on the side until needed.

Step Three – Cook the Courgette

Mist a little cooking spray in a non-stick frying pan over medium heat.

Step Four

Add the courgette slices and cook for a few minutes on each side until they are soft and brown. Remove from the pan and leave to one side.

Step Five – Cook the Halloumi

Add the halloumi fingers to the same pan and cook for a few minutes on each side until golden brown. 

You can also air fry both halloumi and courgette.

Step Six – Build the Salad

While the halloumi is cooking, place the lettuce, tomato and cucumber in two salad bowls.

Step Seven

Stir the dressing and drizzle over the salads.

Step Eight

Sprinkle on the couscous.

Step Nine

Add the courgette and crispy halloumi.

Serve immediately.

Can You Grill the Courgette and Halloumi?

Grilled courgette and halloumi is lovely. If you prefer to grill, that’s absolutely fine. Just take care not to burn them. 

Can You Chop the Courgette and Halloumi?

Yes. I often chopped the halloumi and courgette into bite-size chunks once cooked. It means you can eat your salad with one hand!

What to Serve with Couscous and Halloumi Salad

I typically serve my couscous halloumi salad on its own. You could add some bread if you wanted, but it’s not necessary.
