White Potatoes – If you are in the US, Russet potatoes are the best. In the UK, something like Maris Pipers, or the bag the supermarket label “Baking Potatoes”.
Olive Oil – Other cooking oils are okay, too.
Salt and Freshly Ground Black Pepper

As well as an air fryer with a crisper tray, you’ll need a sharp knife and chopping board to cut your potatoes, a mixing bowl to soak them, and a clean tea towel to let them air dry.

How to Make Potato Wedges in an Air Fryer – Step-by-Step Instructions
Making potato wedges in the air fryer is so easy! Read these instructions for how to make potato wedges in air fryer, how long to cook potato wedges in air fryer and air fryer potato wedges temperature.

Step One
Cut the potatoes into eight long wedges (4-6 if smaller) and place them in a large mixing bowl.
Step Two
Cover with hot water. It should be hot to the touch but not boiling. This removes the starch and gives your potatoes a bit of a head start. Some recipes use cold water, but I find hot works better.

Step Three
Soak for 15 minutes
Step Four
Drain thoroughly and tip onto a clean towel in one layer. Leave to air dry for 5 minutes and dab off any excess water.

Step Five
Preheat your air fryer to 200 degrees C and set for 30 minutes.
Step Six
Return the potato wedges to the dry mixing bowl and pour in the olive oil.
Step Seven
Add a good pinch of salt and pepper and toss until the potatoes are well coated in oil.
Step Eight
Remove the air fryer basket drawer and add the potatoes to the crisper tray in one layer. They can overlap a little, but give them as much space as possible and don’t pile them up.

Step Nine
Place in the air fryer and cook for 15 minutes.
Step Ten
After 15 minutes, remove the drawer and shake well to turn the potatoes. If any seem stuck, poke them with a silicone spatula.
Step Eleven
Return to the air fryer and reduce the temperature to 180 degrees C for the final 15 minutes.

Step Twelve
Make sure the potatoes are soft in the middle and return for a few more minutes if necessary.
Serve straight away.

Serving Suggestions
I usually serve my easy wedges as a side dish with things like burgers, wraps, crispy chicken burgers and sandwiches.
You can also use these wedges for loaded wedges with leftover chilli or serve them on their own with your favourite sauces and dips.

Variations
The best variation to this recipe is the addition of spices. Salt and pepper is a great start, but air fryer wedges are also great with things like cajun seasoning, peri peri seasoning, garlic powder, paprika and chilli powder.
Add a teaspoon when you toss in oil, and take it from there.

Leftovers
Leftover air fryer wedges can be reheated (keep them crispy by using the reheat setting of your air fryer) and served the next day.
Storage
Let leftover wedges cool before placing them in a sealed or covered tub and storing them in the fridge for a day or two.

FAQ
This removes some of the starch from the potatoes, which helps them to crisp up and stops them from sticking to the tray.
They are healthier than deep-fried chips of wedges, but there’s still a bit of oil.
I start my wedges at 200 degrees C before reducing to 180 for the perfect fluffy in the middle, crispy on the outside texture.
If your potatoes are soggy, the temperature might be too low, you might not have dried them enough, or there may be too many in the machine.
A single layer is best for crispy wedges.
Cut one of your potato wedges in half to make sure the middles are soft.
Soaking and tossing in oil will stop your wedges from sticking, but make sure you give them a really good shake halfway through the cooking time.
