These Cheesy Leftover Chilli Loaded Wedges are the perfect way to use up leftover chilli con carne. Filling and delicious, they make a fantastic weekday lunch or dinner.

Chilli Con Carne is one of my favourite family dinners. It’s the perfect midweek meal that we all absolutely love.
Perhaps one of the best things about chilli is that it gets better.
Keep your leftovers in the fridge overnight, and the next day, the flavours will have developed, and your chilli will be even better than it was the first time.
Now, there’s absolutely loads that you can do with leftover chilli.
We really like next-day burritos, which are fabulous, and if I’ve only got a bit left, I might have it on a baked potato for my lunch.
Another option is these fantastic leftover chilli-loaded wedges.

What are Loaded Wedges?
Loaded potato wedges are basically wedges with stuff on top.
When it comes to what to put on top, there are tons of options, but I think something meaty like leftover chilli con carne is a fantastic way to turn wedges into a filling (and a little bit dirty!) meal instead of just a side dish.
If you wanted to cheat, you could even use frozen wedges!
Why I Love Leftover Chilli Loaded Wedges
I love this leftover chilli-loaded wedges recipe because:

Ingredients For Leftover Chilli Loaded Wedges
You don’t need much if you’ve already got the chilli (and if you haven’t, I’ve got a few recipes!). I use:
Large Potatoes – White fluffy potatoes like maris piper or King Edwards are best for wedges. I find the ones in the supermarket labelled “baking potatoes” are perfect (and cheap)!
Olive Oil – Other cooking oils work too.
Salt and Pepper
Leftover Chilli – Ideally around 350g, but don’t worry too much. Use what you’ve got.
Mozzarella
Mature Cheddar Cheese – You don’t actually need both, but the combination works well.

You’ll Also Need
I bake my wedges in a rectangular heatproof casserole-style dish that works really well. However, any heatproof dish or baking sheet that’s big enough for your potatoes will do.
You can add some parchment paper/baking paper if you are worried about your wedges sticking.
I also use a chopping board and sharp knife, a mixing bowl to toss my wedges in oil, and a small pan to warm the chilli.
How to Make Leftover Chilli Loaded Wedges – Step-by-Step Instructions
Full, easy-to-follow instructions and quantities are available in the recipe card at the bottom of this post.
Step One
Chop each potato into eight long wedges (or four if your potatoes are smaller).
Step Two
Place the wedges in a large mixing bowl and cover with hot (but not boiling) water.
Step Three
Leave to soak for 15 minutes.
Step Four
Drain Thoroughly and leave to dry on a clean tea towel, dabbing off any excess water.

Step Five
Preheat the oven to 180 degrees C (fan-assisted).
Step Six
Dry the mixing bowl and return the wedges.
Step Seven
Pour in the oil and add a good pinch of salt and pepper.
Step Eight
Mix so that all of the wedges are coated thoroughly in oil.
Step Nine
Tip into an ovenproof dish and spread evenly.

Step Ten
Bake for 30 minutes, tossing halfway through.
Step Eleven
When the potatoes have five minutes left, place the chilli in a medium saucepan and warm over medium heat on the hob, stirring regularly.

Step Twelve
Remove the wedges from the oven, but leave it on, and pour over the warm chilli evenly.
Step Thirteen
Sprinkle over the grated cheese.

Step Fourteen
Return to the oven and bake for 10 minutes until the cheese is golden brown and bubbling.

Top Tips
- If your potatoes are still very firm after 30 minutes, cook for a further 5-10 minutes before adding the chilli. You’re after crispy potato wedges with fluffy middles. If you add the chilli before they’ve crisped up a bit, they’ll go soggy.
- Your chilli doesn’t need to be super saucy, but add a cup of water if it is very dry.
- Make sure the minced beef is piping hot before serving.
- If you are short on chilli, add some extra kidney beans as it warms up.
Serving Suggestions – What Can You Eat with Loaded Wedges
If my wedges were just loaded with cheese, I might serve them as part of a larger meal.
But these are leftover chilli-loaded wedges, so they don’t need anything else.
If you wanted to add anything more, I’d recommend a side salad or some simple boiled or steamed vegetables.

Variations
There are a few things that you could do differently.
Add Spring Onions
Sprinkling some spring onions/green onions onto your cheesy chilli wedges before serving is a great way to add colour and a bit of crunch to your leftover chilli-loaded wedges.
They’ll taste great, too.
Use Different Cheeses
Mozzarella and cheddar are perfect because they melt really well and taste great.
You could use just one or try some different cheeses. Even something stronger, like crumbled blue cheese, could be amazing!
Another option is less cheese. But I love cheesy potato wedges and wouldn’t dream of this!
Make Fresh Chilli Con Carne
You could make a fresh batch if you want loaded wedges but don’t have leftover chilli.
Use Five Bean Chilli
I make my leftover chilli-loaded wedges with chilli con carne. But it would be great with a five-bean chilli, too.
Add Spice to Your Wedges
If you want a little extra spice, add paprika, cajun spice, garlic powder, or chilli powder to your wedges before baking.
You could also add a dollop of sour cream, salsa and/or guacamole, or any other Mexican dips when you serve.

Leftovers
I only recommend reheating chilli once, so don’t save leftovers from your loaded wedges.
Storage
For this recipe, you’ll need leftover chilli.
Store this in a sealed or covered tub or bowl in the fridge, and don’t keep it for more than a day or two.
