For the Fajita Spice Mix:
2TeaspoonsPaprika
1TeaspoonOregano
1TeaspoonCoriander
1TeaspoonCumin
1TeaspoonChilli Powder
PinchSalt and Black Pepper
For the Fajitas:
1TablespoonOlive Oil
375gTurkey Steakssliced into thin strips
1Red Onionsliced
3Bell Peppersdeseeded and sliced
1TeaspoonGarlic Puree
1Small Limejuice only
4Tortilla Wraps
SaladGrated Cheese and Dips to serve - optional
Instructions
Mix the spices and salt and pepper in a small bowl and leave to one side.
Warm the oil in a large, non-stick flameproof pan or dish over medium heat on the hob.
Add the sliced turkey and fry for 5-10 minutes until browned, stirring often.
Add the onions, garlic, and peppers.
Fry for 5 minutes, stirring often.
Add the spices and lime juice, and stir in well.
If it’s dry, add a splash of water.
Cook for 5 minutes, stirring often.
While this is cooking, wrap the wraps in foil and warm in the oven for 5 minutes at 180 degrees C (fan-assisted).
Make sure the turkey is cooked through and 75 degrees C.
Carefully open the wraps and build your fajitas with cheese, turkey, vegetables, and dips like guacamole.
