So apparently, it’s BBQ season! Not that you’d know from going outside! It’s cold, grey and windy. In the middle of June.
But it’s meant to be hot, so I’m getting my BBQ recipes ready, just in case the sun ever comes out!
Halloumi and pineapple skewers are juicy, fruity, colourful, delicious and easy! They’re perfect for summer, and if you can’t get out for a BBQ, you can cook them inside!

Ingredients For Halloumi and Pineapple Skewers
When I make this easy halloumi and pineapple skewers recipe, I use:
Olive Oil – You can use other cooking oils too.
Halloumi Cheese
Tinned Pineapple
Red Onion
Bell Peppers – I use red and yellow, but any colours are fine.
Dried Oregano
Chilli Flakes
Lemon Juice

You’ll Also Need
I use wooden skewers, but only because I bought a huge bag years ago and still have some left. Reusable skewers are better if you have them!
You’ll also need a baking tray to grill in the oven, but if you are cooking BBQ halloumi and pineapple skewers, you can just put them on the grill.
How to Make Halloumi and Pineapple Skewers – Step-by-Step Instructions

Step One
Place 8 wooden skewers in water to soak for 10 minutes. You can skip this if you are using metal skewers, but if you are using wood, soaking helps to stop them from splintering.
Step Two
Place the diced halloumi in a bowl. Drizzle on one tablespoon of oil and a splash of lemon juice.

Step Three
Add the oregano and chilli flakes and toss well.
Step Four
Leave for 10 minutes.
Step Five
Rub a large baking tray with oil. Skip this bit if you are cooking pineapple and halloumi skewers on a BBQ.
Step Six
Carefully thread the halloumi (slowly, so it doesn’t break up), pineapple, peppers and onions onto the skewers in a repeating pattern. I tend to add two bits of pineapple together.
Step Seven
Place on the baking tray. Use two trays or cook in two batches if you don’t have a tray that fits all eight.

Step Eight
Grill for 10 minutes on medium heat until the halloumi is golden, carefully turning halfway.

Serving Suggestions
I serve my grilled halloumi and pineapple skewers with flatbreads, salad and a simple yoghurt mint dip (2 tablespoons of Greek or natural yoghurt mixed with a teaspoon of mint sauce).
You can serve them with any of your BBQ favourites, as a side on their own, or with chips, potato salad, wedges or coleslaw.

Variations
This recipe for halloumi and pineapple skewers is super simple and incredibly tasty, but there are a few things that you can do differently.
Add Courgettes
Add sliced courgettes instead of peppers.
Change the Seasoning
Oregano and chilli taste great and are super simple. But you can try different seasonings. Things like paprika for spice, and some finely crushed garlic would be yummy. You could also try adding lime juice instead of lemon.
You might want to add some freshly ground black pepper, but I don’t recommend salt. Halloumi is already very salty.
Use Fresh Pineapple
Fresh pineapple is lovely, but a faff! If you want to use it and don’t mind the prep, go for it!

Leftovers
Leftovers can be reheated for a few minutes on the grill or BBQ. You could also remove them from the skewers and warm them for a minute or so in the microwave.
Storage
Store leftovers in the fridge for a day or two.
FAQ
Soaking in a little oil and lemon helps, but you should also make sure you cut into fairly large chunks, and that you cut and thread carefully and slowly.
I cut tinned pineapple rings into around 1cm chunks.
