I get really bored with breakfast. I find the concept of buying a pack of cereal and eating that until it’s gone really strange. 

You wouldn’t eat the same lunch or dinner (well, I wouldn’t) every day for two weeks, so why would you want to eat the same breakfast?

Then there’s the absolute lack of calories in something like cereal or toast. The bit between breakfast and lunch is probably the busiest time of my day, but also the time with the least fuel. 

It’s just all wrong!

So, while I love cereal and toast, I sometimes need something more. 

We often have things like sausage sandwiches, pancakes, or French toast at the weekend. But while I want a bigger breakfast, I don’t always want all the extra calories, and these recipes are usually treats.

Eggy bread is somewhere in the middle. You can easily add a little sweetness and even make it an unhealthy treat. But with a pile of fresh fruit, it is healthy, filling, and packed with energy. 

It’s the perfect breakfast if you’ve got a busy day or brunch if you need something extra between breakfast and lunch. 

Why I Love Eggy Bread

I really think this easy eggy bread recipe is the perfect breakfast because:

  • It’s quick, easy, and cheap.
  • You can add fruit as a healthy option, but it also works with syrup if you want something sweet. 
  • Eggy bread with bacon and either syrup or ketchup make a fab filling breakfast. 
  • It’s healthier than French toast or pancakes but still feels special. 
  • You can use different kinds of bread for different tastes and textures. 
  • You’ve probably got everything that you need. 
  • It’s great for weaning. It’s soft, tasty finger food and perfect for even very young children. 
  • It’s a high-protein meal to start the day.

Ingredients for Eggy Bread

I use:

Eggs

4 Slices Bread – I typically use something like Best of Both because that’s what we have in. White is great, too. 

Semi-Skimmed Milk 

Cooking Spray – You can use olive oil, any other cooking oil, or even a tbsp of butter if you prefer.

Toppings of Choice – Fruit and bacon are both ideal.

You’ll Also Need

As well as the ingredients, you’ll need:

A Non-Stick Frying Pan

A Large Shallow Bowl – I use a pasta bowl, but anything you can easily fit a slice of bread in is good. If you only have small bowls, cut your bread into pieces. 

Small Hand Whisk – You can use an electric whisk, but there’s no need. You could even whisk it all together with a fork. 

How to Make Eggy Bread – Step-by-Step Instructions

Step One

In a shallow, wide bowl, whisk together the eggs and milk. I use a pasta bowl, which gives me plenty of space to dip my bread without bending it.

Step Two

Heat the cooking spray in a non-stick pan over medium heat on the hob. You want it nice and hot before you add the dipped bread. 

Step Three

Dip a slice of bread in the egg mixture.

Step Four

Flip and dip again so both sides are coated in egg mixture. It shouldn’t be so saturated that you can’t lift it without breaking, but you want a nice soaking. 

It can be helpful to lift with a spatula instead of picking it up with your hands.

Step Five

Carefully place the bread in the pan.

Step Six

Fry for 1-2 minutes on each side until golden brown. If one side needs longer, flip it back over until it’s how you want it.

Step Seven

Repeat for all the bread.

Step Eight

Serve with your toppings of choice.

Top Tips

Making eggy bread is super easy, so my tips are limited!

  • Warm the pan before adding the bread. This stops it from sticking and helps you to avoid the first pancake is always rubbish phenomenon. 
  • Give each side a full minute or two and turn back if it’s still under-done. 
  • Use a good quality non-stick pan.

Serving Suggestions

For a quick breakfast, I quite often just have it with tomato ketchup.

I also like it with bacon and ketchup, but I know many people like bacon and syrup. 

My favourite toppings are strawberries and bananas. Other berries like blueberries and raspberries are great, too. All topped with a little drizzle of golden syrup, but that’s optional if you want a healthy breakfast.

Variations

I love eggy bread with fruit. It’s easy, filling, refreshing, and filled with nutrients. But if you want to try something a little different, eggy bread recipes can be very versatile, and there are plenty of options.

How to Make Eggy Bread with Cheese

A cheesy eggy bread recipe is delicious and an easy alternative to something like an omelette. 

Simply whisk grated cheddar cheese in with your eggs and milk. 

Dip your bread, and let it absorb plenty of egg. Then, when you’ve transferred your bread into the pan to cook, scoop out a little of the grated cheese left in the bowl and place it on top of the soaked bread, spreading a little. 

It’ll melt as it warms up. 

Cinnamon Eggy Bread

Cinnamon is a lovely, sweet, warming flavour.

All you need to do is add ½ teaspoon of cinnamon to your eggs before you whisk.

Add more for a stronger flavour. 

Fruity Eggy Bread

The egg mix isn’t the only thing that you can change. You can also use different bread. 

Instead of white or, best of both, dip slices of fruit loaf, cinnamon, and raisin bread into your whisked egg mixture.

Chocolate 

When it comes to chocolate eggy bread, there are three options. 

First, you can add a tablespoon of cocoa powder to your egg mixture. 

Second, you could spread your cooked bread with chocolate spread or drizzle it with chocolate sauce. 

Third, you could use chocolate bread. Something like a sliced chocolate chip or swirled brioche could work well. 

Seeded

I love seeded bread. My kids don’t really like it, so it’s not something that we have a lot. 

But you can use it if you want to. It works really well.

High-Fibre Eggy Bread

If you want more fibre, you can absolutely use brown bread instead of white. Lots of fruit helps here, too!

How to Make Eggy Bread Without Milk

If you want to make eggy bread without milk, just skip it. Your mixture will be a little thicker and won’t go as far, but it will still work.

How to Make Sweet Eggy Bread

Sweet Eggy Bread is basically French toast. Which is wonderful! Add a tablespoon or two (or more, depending on how sweet you like it!) of caster or granulated sugar before you whisk the mixture together. 

Leftovers

I recommend only making as much as you need. If there is any leftover, you can keep and reheat, but the texture won’t be the same.

Storage

Store leftovers in an airtight bag or tub in the fridge and reheat for a few minutes in a pan before eating. 

I wouldn’t keep it for longer than a day or two.
