This recipe for sweet chilli chicken pasta isn’t for everyone. It’s an unusual mix of flavours and textures, but I really like It because:

- Philadelphia sweet chilli pasta is super cheap (I actually use Aldi’s own soft cheese), super quick, and super easy.
- It makes a nice change from all those pasta recipes that you eat on repeat every week.

Ingredients For Sweet Chilli Chicken Pasta
When I make this easy, sweet chilli pasta, I use:
Olive Oil – Other cooking oils are fine, too.
Onion – Red onion or yellow.
Chicken Breasts
Garlic Puree
Chilli Puree – Use one fresh diced red chilli and two crushed garlic cloves if you prefer.
Bell Peppers – Any colours are fine.
Sweet Chilli Sauce – Store-bought or homemade. I use store-bought.
Soft Cheese – Any brand is fine, but make sure it’s full-fat.
Spaghetti – Spaghetti looks good and is easy to stir through, but you can use other pasta.

This is a super simple recipe equipment-wise. You only need a sharp knife, chopping board, saucepan, colander, frying pan, and spatula.
Tongs are helpful to mix in the pasta and serve, but they aren’t essential.
How to Make Sweet Chilli Chicken Pasta – Step-by-Step Instructions

Step One
Heat the oil in a large, non-stick frying pan over medium heat on the hob.
You want to be able to use some pasta water in the sauce, so start preparing the pasta at around the same time, depending on how long it takes to cook. Check the packet.
Step Two
Add the onions and fry for 5 minutes, stirring often. Fry for longer if you want them really soft.
Step Three
Add the chicken and fry for 10 minutes until cooked through, stirring often. I’d usually just brown the outsides, as the middle would cook while the sauce simmers, but there’s not much simmering in this recipe, so I like to make sure my chicken is cooked through before moving on. Cut a bigger piece open and make sure the centre is cooked.
Step Four
Stir in the chilli and garlic. If you are using fresh instead of puree, cook for 2-3 minutes before moving on. If you are using puree, you can just stir it through and carry on.
Step Five
Add the peppers and stir well. If you like your peppers really soft, cook for a little longer.
Step Six
Add the sweet chilli sauce and soft cheese. Cook until the soft cheese has melted and the sauce is smooth, stirring often. This won’t take long.
Step Seven
Pour in a ladle of pasta water and stir well.
If it’s really watery, simmer for 5-10 minutes. But it’s not that much liquid, so it should be ok.
Step Eight
Drain the pasta and stir into the sauce. This is easier with tongs.
Step Nine
Use a food thermometer to make sure the chicken has reached 75 degrees C, and serve.
Top Tips
This isn’t a wet, saucy pasta. It’s filled with flavour, but it’s fairly dry. Don’t feel like you need to add more water, you’ll just spend ages getting it to thicken.
I’d also say it’s quite a divisive flavour. If you love sweet chilli, give it a go. But at the same time, I appreciate that this probably isn’t a recipe that everyone will love.
Serving Suggestions
You can serve this easy, sweet chili chicken spaghetti straight from the pan. It’s got meat, veggies, and pasta and is fine just as it is. If you want more, I’d add a side salad or some garlic bread—or both.
You could also sprinkle a handful of spring onions on the top before serving.
Variations
There are a few things that you can do differently.
Add Vegetable Stock
If you prefer a saucy pasta, you might want to add some veg or chicken stock and a little tomato puree and simmer it until it’s reduced.
I don’t do this. I don’t mind it drier, and it’s a super quick and easy recipe without any reduction.
Use Cream
You can skip the soft cheese entirely if you don’t like it, or add a double cream splash instead.
Add Cherry Tomatoes
If you want more veg and more colour, adding some cherry tomatoes, either whole, diced or chopped in half, with the peppers can be a welcome addition.
Add Spinach
Spinach is another excellent addition that will add a nice warm flavour and some colour. Add a few handfuls with the pasta water and serve once they’ve wilted and mixed through.
Use Different Pasta
I love spaghetti, but I also make this with tagliatelle. You can use any pasta.
Leftovers
Leftovers can be reheated in the microwave or on the hob. You might want to add some water to prevent the chicken from sticking to the pan and use a food thermometer to ensure it is above 75 degrees 6 before serving.
Storage
Remove leftovers from the cooking pan and place them in a clean bowl or tub to cool before sealing them and putting them in the fridge.
Keep for up to two days as long as the chicken is in date.
