Ingredients For Sausage Fried Rice
When I make sausage egg-fried rice, I use:
Butter – Use vegetable oil instead if you prefer.
Pork Sausages – You can use a fancy, or flavoured sausage if you want to, or just the budget pork sausages you’d usually buy.
Red Onion
Garlic Puree – You can use 2 cloves of fresh garlic, but I love garlic puree, it’s so easy to use.
Frozen Peas
White Rice – I use long-grain white rice, but you could try other things, like jasmine rice if you wanted.
Eggs
Hoisin Sauce – Oyster sauce is great too.
Light Soy Sauce – Use dark if that’s what you’ve got.
Chinese Five Spice
Spring Onions
Sesame Oil – Sesame oil isn’t a cooking oil, it’s a taste oil, so you just add it at the very end, or even on the table.

How to Make Sausage Fried Rice – Step-by-Step Instructions
Full, easy-to-follow instructions and quantities are available in the recipe card at the bottom of this post.
Step One
Melt the butter in a large, non-stick frying pan or skillet over medium heat on the hob.

Step Two
Add the sausage pieces and fry for 10 minutes until browned, stirring often. You can fry them until they’re golden brown, which looks better, but you don’t have to, they just need to be cooked through.

Step Three
Add the onions and fry for a further 5 minutes, stirring often.

Step Four
Stir in the garlic. If you are using fresh garlic, cook for two minutes before you move on to the next step.
Step Five
Add the peas.

Step Six
Crack the eggs straight into the pan and scramble, moving constantly until nearly cooked.
Another option is adding the eggs after the rice, or scrambling separately and adding with the rice. Do what you find easier.
Step Seven
Add the rest of the butter and the rice. Stir well.

Step Eight
Add the hoisin, soy and five spice.
Step Nine
Stir well.
Step Ten
Cook for 10 minutes, stirring often, until the rice is piping hot.
Step Eleven
Finish by scattering on the spring onions and drizzling with sesame oil.

Step Twelve
Serve straight from the pan.
Top Tips for Perfect Sausage Fried Rice
Keep it moving!
Once the eggs are in the pan, it will stick, or clump together, so keep it moving to get the eggs nicely scrambled and stop it all sticking to the pan.
I also recommend using a good-quality pan. This is an affiliate link to the one I use. I’ll make a little bit of money if you order anything after clicking on that link, but I’d recommend it even if I wouldn’t. They’re non-stick, value for money, and we’ve had ours for absolutely years.
Then really, just make sure the rice is piping hot before serving. Some people prefer to use cold rice, making cooking until it’s piping hot even more important.

Fried rice is a super versatile dinner, so there’s plenty that you can do differently.
Use Different Sausages
Fried rice with Chinese sausage would be super tasty, you could also use smoked sausage, sliced hotdog sausage, or chicken sausage. Try any sausages you like. Chorizo Fried Rice is also delicious.
Add Extra Veggies
Another option is adding extra vegetables. Any frozen veg, especially corn, is great, just make sure you give them time to cook.
You can also add fresh veggies, like carrots, just make sure they are finely chopped, and that you give them time to soften.

Leftovers
I don’t recommend saving leftover sausage fried rice. Rice is risky, and the risks increase every time you reheat it.

If your fried rice is mushy, you may have boiled it for too long before adding it. You might have also used too much liquid, or not drained your rice well enough.
