3TablespoonsButter
8Pork Sausageschopped into bites
1Red Onionfinely diced
1TeaspoonGarlic Puree
200gFrozen Peas
200gWhite Ricecooked to an al-dente texture, drained, rinsed and set to one side
3Eggs
2TablespoonsHoisin Sauce
4TablespoonsLight Soy Sauce
1TeaspoonChinese Five Spice
4Spring Onionsfinely sliced
Drizzle Sesame Oil
Instructions
Melt the butter in a large, non-stick frying pan or skillet over medium heat on the hob.
Add the sausage pieces and fry for 10 minutes until browned, stirring often.
Add the onions and fry for a further 5 minutes, stirring often.
Stir in the garlic.
Add the peas.
Crack the eggs straight into the pan and scramble, moving constantly until nearly cooked.
Add the rest of the butter and the rice. Stir well.
Add the hoisin, soy and five spice.
Stir well.
Cook for 10 minutes, stirring often, until the rice is piping hot.
Finish by scattering on the spring onions and drizzling with sesame oil.
Serve straight from the pan.
Notes
If you find it easier, scramble the eggs first, and keep them in a bowl to one side, adding to your pan with the rice.
