This Easy Leftover Turkey Fried Rice is the perfect way to use up leftover turkey, as well as leftover veg and rice. Super simple with loads of texture, colour and flavour. Yummy!

Making filling family dinners with leftover meat is one of my favourite things to do. It’s a great way to save money, reduce waste and try new things. 

Most Monday’s we’ll make a stew or casserole with leftover meat, but I really love to try new things like fried rice, risotto or curry

There’s so much that you can do with your leftovers. This is especially true at Christmas when you’ve got tons of turkey to use up, and probably plenty of veg too. 

This Easy Leftover Turkey Fried Rice gives you a fantastic way to use it all! It certainly beats turkey sandwiches all week, and to be honest, doesn’t take much longer to make.

Ingredients for Leftover Turkey Fried Rice

I like to make Fried Rice with Leftover Turkey Thighs. The kids tend to have breast meat on their meal, so there’s always more thigh and leg meat left.

Turkey thigh is often juicer and more flavourful than breast meat too, making this Leftover Turkey Fried Rice Recipe really yummy. 

Of course, you could make it with breast meat, but if you are wondering What To Do with Leftover Turkey Thighs, then this turkey thigh fried rice could be perfect.

Apart from turkey thighs I use:

  • Butter
  • Eggs
  • Garlic
  • Carrots
  • Peas
  • Corn
  • Rice

And for the fried rice sauce:

  • Soy Sauce
  • Oyster Sauce 
  • Chinese 5 Spice

Finally, I drizzle over some Sesame oil to serve, as well as sprinkling in some finely sliced spring onions. 

Adding Leftover Vegetables to Fried Rice

I love to make Turkey Fried Rice with Carrots, Peas and Corn using frozen peas and corn. It’s cheap and easy.

But you can also add any leftover vegetables that you may have, like broccoli or sprouts. Just chop them fairly small and add towards the end of cooking so that they don’t go too mushy as you stir them through the fried rice. 

How to Make Leftover Turkey Fried Rice

Egg Fried Rice with Turkey is one of those fab recipes where you just throw everything into a pan and stir it all together.

I like to crack the eggs straight into the rice and stir them through until they scramble with the rice.

Another option however is scrambling them lightly first, leaving to one side and then folding them through the rice once it’s cooked and piping hot. I’d probably add the egg before the sauce. 

Top Tips for the Perfect Homemade Fried Rice

For the perfect fried rice:

  • Use cooked, cooled rice. I like to undercook it by a few minutes, so there’s no danger of mushy fried rice later
  • Use plenty of butter, not oil or spray
  • Make sure everything is piping hot before serving
  • Once the eggs are in, keep things moving so that nothing sticks to the pan
  • Sesame oil isn’t like cooking oil, it’s more of a flavouring, so add it at the end
  • Season with salt and pepper if you need to, but taste first
  • Make sure the rice is piping hot before serving

Making Fried Rice with Uncooked Turkey Thighs

You can make Turkey Fried Rice with Egg with uncooked turkey thighs, other turkey meat, or even chicken if you prefer. 

Just chop the thighs up into small chunks and brown off with some oil in a pan first. Then remove from the pan and follow this recipe, returning the turkey as you would leftover, cooked meat. 

Make sure the turkey is cooked through and piping hot before serving.

Ingredients
  

  • 750 g Cooked Turkey Thighs (Cut into small chunks)
  • 2 Tablespoons Butter
  • 2 Cloves Garlic (Crushed)
  • 2 Medium Carrots (Peeled and finely sliced)
  • 150 g Frozen Peas
  • 150 g Frozen Corn
  • 250 g White Rice (Cooked and drained)
  • 3 Eggs
  • 4 Tablespoons Soy Sauce
  • 2 Tablespoons Oyster Sauce
  • 1 Teaspoon Chinese 5 Spice
  • 3 Spring Onions (Finely Sliced)
  • 1 Tablespoon Sesame Oil

Instructions
 

  • Melt half of the butter in a large pan on the hob.
  • Add the garlic and fry for a few minutes until fragrant.
  • Add the turkey, carrots, peas, and corn and stir together well.
  • Pour in the cooked rice and stir through the remaining butter.
  • Cook for 5 minutes, stirring often.
  • Crack the eggs into the centre of the pan and stir well.
  • Continue to fold so that the eggs scramble into the rice.
  • Stir through the soy, oyster sauce, and Chinese 5 spice.
  • Continue to cook for 5-10 minutes, stirring often, until the rice is piping hot.
  • Sprinkle on the spring onions and stir through.
  • Stir through a drizzle of sesame oil.
  • Check that the turkey and rice are piping hot before serving.

Notes

  • If you’ve got less turkey that’s fine, add more veg or rice if you need to.
  • I cook my fried rice in a large, non-stick frying pan.
