Bored of Turkey Sandwiches? Looking for a new way to use up your leftover turkey and veg? This Leftover Christmas Dinner Pizza is made with easy, yeast-free flatbreads and is the perfect way to use all of your leftovers!
Don’t get me wrong, I love a leftover turkey sandwich. It’s a Boxing Day staple. As I write this, it’s the start of November, and my husband has already started to plan his Boxing Day sandwich.
But one is enough for me. If there’s any turkey leftover after that, I prefer to use it up in a nice filling meal with different flavours.
These Leftover Turkey Flatbread Pizzas are fab. They are filling and tasty and super easy to make.
They are also, let’s face it, a bit of a glorified turkey sandwich. But hot, so you can think of them as a proper meal!

What’s On a Christmas Dinner Pizza?
You can put pretty much whatever you’ve got on your Christmas Dinner Pizza!
Personally, I’d put stuffing on, but the rest of the family don’t like it.
You don’t even have to add turkey, you can use whatever you had for your festive dinner whether that’s a kind of meat or something else entirely.
Pizza is effectively bread, sauce, and cheese, so it really works with almost anything!

Adding Vegetables to Leftover Christmas Dinner Pizza
As you’ll see in my recipe and photos, I’ve put sprouts on my Easy Leftover Turkey Flatbread Pizzas. We love sprouts in our house and eat them every Sunday that they are in season.
But you can switch the sprouts for whatever veg you have, or add some spinach before cooking. You can also skip the veg if you’ve got none left.
What Cheese Should You Use on a Leftover Turkey Pizza?
When it comes to cheese, I’ve made my Christmas Dinner Pizza Recipe with a few different options. For this recipe, I’ve said brie, but again, whatever you’ve got.

Camembert is great, as is mozzarella. Even a cheddar would work, or a mix of all of them. You could even crumble some blue cheese onto the top if you fancy a stronger flavour.
Top your Turkey and Cranberry Sauce Flatbreads with whatever is left in your Christmas cheese box.
Making Yeast Free Flatbreads
I absolutely love making Quick and Easy Flatbreads! There’s no proofing, no need for yeast, and not too much kneading.
We use them for leftover lamb wraps and flatbread pizzas because you can make them super fast without having to prepare in advance.

All you need to self-raising flour, baking powder, and full-fat yoghurt. You basically just mix it all together, divide it into balls, and roll. Then fry for about 4-5 minutes on each side. Easy.
I like quite a thin, crispy base, so I roll them out as thin as I can. You can leave them thicker though if you prefer. Just bear in mind, they will rise a little as they cook. I’d say they probably double in thickness.
Can You Use a Different Base for Christmas Pizza?
Absolutely. These flatbreads are fab, but you can use proper pizza bases, store-bought bases, naan bread. Whatever you want.
How to Make Leftover Christmas Dinner Flatbreads
Once you’ve made your flatbreads or pizza bases, it’s so simple.

Spread (if there’s a smoother side, that’s the top) the top of your flatbread liberally with cranberry, add the turkey (I literally pull this apart with my fingers for a shredded texture, like pulled pork, you can chop it up small if you prefer) and any veg that you want.
Top with cheese and bake in the oven until it’s all warm and melted. Done.

Christmas Dinner Pizza
Ingredients
For the Flatbreads:
- 300 g Self Raising Flour
- 250 g Full Fat Greek Yoghurt
- 1 tsp Baking Powder
For the Topping:
- 400 g Leftover Roast Turkey (Shredded or chopped into fine strips)
- 250 ml Cranberry Sauce (Either homemade or store-bought)
- 100 g Leftover Sprouts (Finely Sliced)
- 100 g Brie (Finely Sliced)
Instructions
To Make the Flatbreads
- Mix the flour, baking powder, and yoghurt until it forms a rough dough
- Tip out onto a well-floured surface and knead into a smooth ball, this takes a few minutes
- Divide into 4 and roll into rough rounds, adding more flour to your surface if needed
- Heat a large frying pan on the hob, and add a few sprays of cooking spray
- Fry each bread for 4-5 minutes on each side until lightly browned
- Leave to cool for a few minutes and preheat the oven to 160 degrees (fan-assisted)
To Bake
- Place the bread on a baking tray, I bake 2 on a tray
- Spread liberally with cranberry sauce
- Spoon on shredded turkey
- Add leftover veg and top with cheese
- Bake for 20-25 minutes until the cheese is melted and the turkey is piping hot
Notes
- Roll your flatbreads based on how thick you like your bases, but bear in mind, they will increase as they cook. So, for a thin base, roll as thinly as you can, for a deeper base, roll to around 3mm.
- You can swap homemade flatbreads or pizza bases (either store-bought or homemade).
- You can also swap the sprouts for other leftover veg, or miss completely, add leftover stuffing and swap the brie for any leftover Christmas cheese that you might have.
