Indulge in this delicious and easy Maltesers Rocky Road recipe. Packed with chocolate, marshmallows, and crunchy Maltesers, this treat will be a hit with the kids!

So this is perhaps not your everyday Rocky Road

But you know what, I can’t do that.

Which is obviously ridiculous.

I try to make a normal-sized rocky road. I try to save money by using less chocolate and adding less crunch.

And it always fails miserably. I can’t even tell you why.

So I’ve learned that when it comes to Rocky Road, there shouldn’t be a basic option. It should always be big, full, and exceptional. 

You can save money by using supermarket’s own chocolate, biscuits and marshmallows. You can also use fewer Maltesers. I use those big boxes, which are always on offer around Valentine’s Day, Mother’s Day and other holidays, which usually means that 300g is cheaper than two 100g sharer bags. 

But if you are buying bags, and they aren’t on offer, 200g will do. 

Other than that, if you want to make it cheaper, and less calorific, I recommend making less, either using a smaller tin or making then shallower, halving all of the ingredients. 

I recommend going all out and making a giant Rocky Road, but perhaps just for special occasions.

Why I Love Maltesers Rocky Road

Why do I love Maltesers Rocky Road? Erm, look at it!

  • It’s huge and really special. A decadent sweet treat. 
  • It doesn’t skimp on filling. There are lots of different tastes and textures going on in these delicious chocolate slices or squares.
  • Maltesers Rocky Road is delicious. 
  • Rocky Road is always good for making with kids. Because it’s no-bake, even young kids can help.
  • It’s the perfect no-bake chocolate treat.

Ingredients For Maltesers Rocky Road

You don’t need many different ingredients. But you do need loads of them! 

For my Rocky Road with Maltesers, I use:

Dark Chocolate – Good quality chocolate like Lindt is great, but honestly, I use Morrisons Own and it’s great. 

Milk Chocolate – Lots of people use all of one kind, or a 50/50 split when they make Rocky Road. I use both, but 2/3s milk. I prefer this ratio but feel free to experiment. 

Margarine – Butter is fine too. 

Golden Syrup

Digestive Biscuits

Mini Marshmallows

Maltesers – I use a ton. Feel free to adjust.

You’ll Also Need

All you need to make Rocky Road is a large mixing bowl, saucepan, spatula or spoon, a cake tin and baking paper.

I use an 8-inch square tin and reusable paper.

My Rocky Road is deep! You could use a larger tin if you wanted it less massive!

How to Make Maltesers Rocky Road – Step-by-Step Instructions

Full, easy-to-follow instructions and quantities are available in the recipe card at the bottom of this post.

Step One

Chop the chocolate and set it to one side. This isn’t absolutely necessary, but it does help the chocolate to melt faster and reduces the risk of any splitting. It takes a while but I think it’s worth it.

Step Two

Grease and line a cake tin. I really recommend both for easy removal of your Maltesers fridge cake.

Step Three

Place the margarine and golden syrup in a saucepan and warm over medium heat on the hob.

Step Four

Stir until the butter has melted and the mixture is hot.

Remove from the heat.

Step Six

Add the chocolate in 3 or 4 batches, stirring in until completely melted before adding more. This takes a while, but be patient. 

If your chocolate really stops melting, return to a very low heat until it does.

Step Seven

Leave to cool for at least 10 minutes, until the mixture is cool but pourable. Stir occasionally. 

It needs to be cool enough that it won’t melt the Maltesers or marshmallows. 

Step Eight

While you are waiting break the biscuits up in a mixing bowl, so you’ve got uneven chunks. You can use a rolling pin to bash them, I used to do this, but breaking with your hands means you can control the size of the chunks more and it doesn’t take long. 

Step Nine

Add the marshmallows, and most of the Maltesers, retaining a handful to top. If you are using fewer Maltesers, I’d put them all in now.

Step Ten

Pour in around 3/4s of the chocolate mixture. 

Step Eleven

Stir well, making sure you really dig down to the bottom until the biscuits, marshmallows and Maltesers are covered in chocolate.

Step Twelve

Tip into the prepared tin and use a spatula to compress and flatten. 

Step Thirteen

Pour over the remaining melted chocolate and spread until even.

Press in the remaining Maltesers.

Refrigerate for at least 5 hours. 

Step Sixteen

Carefully remove it from the tin and peel off the paper before slicing it into individual portions.

Variations

Rocky Road is brilliant, in part because there are so many options!

Add Other Chocolate

Maltesers do quite a few bits now. Add teasers bars or buttons, and pop a Maltesers reindeer on top for Christmas and a bunny for easter. Adding some white chocolate swirls to the top is another option if you want it to look fancy!

Add Raisins

In Britain, we have Tiffin, which is a no-bake fridge cake with biscuits and chocolate. It’s more likely to contain raisins than marshmallows, but why not try both? 

Other dried fruits can work too, and complement soft marshmallows well. Try the things that you like!

Use Different Biscuits

Digestive, or graham crackers, are ideal. But rich tea, malted milk biscuits, biscoff, or even hobnobs would work in Malteser Rocky Road.

Add Nuts

I don’t love nuts in my Rocky Road, but it is just a preference. 

Things like walnuts, peanuts, almonds, and pistachios could make great additions to your Maltesers rocky road recipe.

Storage 

Store in an airtight container at room temperature for 2-3 days. 

You might find that the exposed middles of the Maltesers (so any you’ve sliced through) go a bit soft, but they’re still fine to eat.

Notes

  • I use an 8-inch square tin with reusable paper, leaving plenty hanging over to make it easier to remove. 
  • You don’t need to freeze the Maltesers, but putting them in the fridge until you need them can help. 
  • If your chocolate isn’t melting, return to a low heat until it does. 
  • I break the biscuits up by hand instead of crushing them with a rolling pin, to keep chunks fairly big, and avoid too much biscuit dust. 
  • I run a sharp knife under very hot water and wipe before slicing.
