Ingredients For Sausage Stir Fry

There are a lot of ingredients, but it’s all simple stuff, and you don’t have to use it all:

Pork Sausages – Your stir fry sausages don’t need to be fancy. Use what you like. Even a smoked sausage stir fry could be lovely.

Carrots

Bell Peppers – Any colours.

Red Onion

Baby Corn

Courgette

Mushrooms – Closed cups, chestnuts or buttons are best.

chopped vegetables.

Garlic Puree

Chilli Puree

Ginger Puree – You can use fresh of all these, but purees are so easy! If you are using fresh go for 3 cloves garlic, 1 inch of ginger and 1 red chilli.

Soy Sauce – I use low sodium.

Honey

Olive Oil – Other cooking oils are fine too.

Orange – You just need the juice, so if you prefer you can use juice from a carton.

Cornflour

Water

Straight to Wok Noodles – Straight to wok are super easy to cook with, but you can use any kind of noodles you like, just cook to the packet instructions.

You’ll Also Need

A wok is ideal, it’s a big sausage stir fry with vegetables. I really should get one. But any large, non-stick, flameproof pan will do.

Then you just need a chopping board, sharp knife, spatula, and a jug and whisk.

Stir in the garlic, ginger and chilli. If you are using fresh, cook for a few minutes before moving on. If any sausage meat has escaped and stuck, pour in a little of the sauce and scrape the bottom of the pan with a spatula.

Step Seven

Bring to a simmer and cook for 10-15 minutes, stirring often until it’s thick and sticky. I recommend using a food thermometer to make sure the sausages are cooked through.

Step Eight

Stir in the noodles and cook for 2-3 minutes until softened and covered in sauce. If you aren’t using straight-to-wok noodles, cook them according to the packet instructions.

Top Tips

I just have a few tips for the perfect sausage stir fry:

  • Taste the sauce once it’s mixed in. It might taste a little bitter in the jug, so let it cook for a few minutes before tasting. Then, add a little more honey, soy or orange juice to taste.
  • Use a wok. I ridiculously don’t have one, and can confirm trying to cook a massive stir fry in a frying pan is a mess!
  • I don’t take the skin off my sausages. But, as they cook and expand, the skin can start to come away. Just pop it off then if you want to. They’ll be hot, but the skin will just peel away really easily.

Serving Suggestions

I serve my sausage stir fry as it is straight from the pan. It’s got meat, noodles and tons of veggies, so you’re good to go.

Variations

Stir fries are super flexible, so there’s absolutely loads that you can do differently to suit your tastes.

Change the Sauce

I love this sweet orange sauce. It works well with the bold flavour of sausage and juicy veggies.

But you can change it if you want to.

A Korean-style stir fry sauce would be nice, or something like a sweet chilli or hoisin. Whatever you like really.

If you like more spice, add a pinch of Red pepper flakes.

Use Store-Bought Sauce

Homemade stir-fry sauce is really easy, but if you prefer, buy sauce and throw it in!

Change the Veggies

I use quite a lot of veg. I like the combination of flavours and textures. You can skip some If you don’t like them, and you can also add extras!

Sausage stir fry with broccoli would be nice, and things like sugar snap peas make an excellent addition.

Take the Skin Off the Sausages

I leave it on. You can take it off, or squeeze the sausage meat out of the skin, and roll it into little sausage meatballs. These will cook faster, and you’ll get more of them. Sausage meat stir fry is great without skin!

Use Chicken Sausage

Pork sausage is great in stir fry, but you can use chicken sausage if you prefer.

Add Potato

Sausage stir fry with potato instead of noodles is cool. Make potato wedges and stir them in, in place of the noodles.

Add Rice

Sausage stir fry with rice is another option. Cook some white rice, drain, rinse and stir in, in place of the noodles.

Leftovers

Leftovers can be reheated in a pan, or the microwave. Make sure the sausages are cooked before serving. Just bear in mind that the noodles will soften when reheated.

If you know you don’t need as much, reduce the ingredients.

Storage

Remove the leftovers from the cooking pan and place them in a clean tub to cool quickly. Make sure they are covered and in the fridge within 2 hours. Keep for up to two days.
