I must confess to being on a bit of a health kick. I’ve gained about a stone in lockdown (I know!!) through less activity, and more cake and wine, and I find that I’m actually keen to return to something like healthy eating. 

Or at the very least, healthier. 

But I also confess to having a huge sweet tooth. 

I adore cake, biscuits, chocolate, and other sweet treats. I’m weak to them. 

Which means that I need meals like this tray bake with sweet potato. Not only is it easy, filling, and filled with colour. It’s also sweet!

Roasted sweet potatoes and bell peppers are the perfect sweet fix if you are trying to avoid chocolate. 

This sausage and sweet potato traybake is one of the easiest family dinner recipes going. There’s a little peeling and chopping, then you throw it all on a tray with some oil, salt, and pepper and bake. That’s it.

After a busy day, or when it’s hot, and you don’t want to put in too much effort, an easy traybake is absolutely perfect. 

This sausage tray bake recipe is also perfect for the kids. Mine absolutely love sausages, so a meal like this is a fantastic way to add plenty of extra veg to their diet. 

Easy Midweek Meals

We’re a busy family. Most are, I suppose. While I do love a busy life, it often means that I don’t have as much time to cook as I’d like. 

That’s why traybakes like this are brilliant. My sausage and sweet potato tray bake takes about 40 minutes to cook, but there’s barely any prep, and hardly any washing up, which is always a win!

Easy midweek meals probably make up the bulk of our diet. It’s great to be able to eat healthy and filling meals without having to spend hours in the kitchen. 

What is a Traybake Dinner?

Traybakes come in two very different varieties. There’s the cakey kind, where you make a cake in a deep baking tray. Think the chocolate cake that we all buy our kids to take into school on their birthdays. 

These are easy to slice and make great sweet treats. 

Then, there are family dinner traybake recipes like this sausage traybake with sweet potato. 

I absolutely love traybake dinner recipes. They are so wonderfully easy. 

I tend to put my chopped veg and potatoes in a large mixing bowl to toss with oil and salt and pepper, as I find you get better coverage than drizzling on the tray.

But then I just tip it all onto a deep baking tray and bake in the oven for 30-40 minutes.

A Summer Traybake

I like to think that this sausage, sweet potato, and red onion traybake is fairly summery. It’s so bright and colourful, and sweet potato always feels a lot lighter than white potatoes.

I really love colourful meals, I find them really appetising, don’t you?

But, it’s also very filling and certainly something that you can eat all year round. 

Veg to Use with Sausage and Sweet Potato Traybake

In my sausage and sweet potato traybake recipe, I use sweet potato, onion, and pepper, which all roast really well.

But you could also add new potatoes, white onions, courgettes, aubergines, and even sliced carrots. Basically, any vegetables that roast well will be perfect with this meal. 

Is a Sausage and Sweet Potato Tray Bake Healthy?

Ish! Sausages can be quite fatty. But, if you want to cut calories, lower-fat options are available. You could also switch the olive oil for a calorie-controlled spray.

Sweet potatoes are very healthy, filled with vitamin C, and they count as one of your five a day, and this meal is a great way to eat plenty of vegetables. 

What Do You Need to Bake a Sausage and Sweet Potato Traybake?

You don’t need anything fancy at all to make this sausage and sweet potato traybake. Just a good, non-stick baking tray (affiliate link) or roasting tin. Preferably one that’s about 1 inch deep, and not completely flat.

Ingredients
  

  • 8 Sausages
  • 1 Large Sweet Potato (Peeled and chopped into wedges)
  • 1 Red Pepper (deseeded and chopped into large chunks)
  • 1 Yellow Pepper (deseeded and chopped into large chunks)
  • 1 Red Onion (Peeled and sliced into 8)
  • 16 Vine Cherry Tomatoes
  • 1 tablespoon Olive Oil
  • Pinch Salt and pepper
  • 2 Sprigs fresh rosemary (optional)

Instructions
 

  • Preheat the oven to 180 degrees (fan assisted).
  • Peel and chop all of the veg.
  • Toss in oil, salt, and pepper with the sausages.
  • Tip on to a baking tray and spread evenly.
  • Add the rosemary if using (1tsp of ground is fine).
  • Bake in the oven for 30-40 minutes until the sweet potatoes are soft.
