Nutella Muffins

Nutella Muffins are amazing! Double Chocolate Chip Muffins with a gooey Nutella middle – the ultimate chocolatey treat!

So these Nutella Muffins are a massive hit in our house! I basically made them because the kids don’t like the Lemon Curd Muffins that I make.

Me and Robyn made these on bank holiday Monday when it was raining all day. Baking is such a great rainy-day activity, and the kids always love something with chocolate. Especially when there are tons of it like in these Double Chocolate Chip Muffins with Nutella Middle. 

So much chocolate!

They look fantastic, with their cracked muffin tops. They smell absolutely amazing as they bake, they are easy to make, and really, isn’t everything better with a big dollop of gooey Nutella in the centre?

The kids were not happy when I told them they couldn’t eat one until I’d taken photos, they normally like to dive on Nutella Stuffed Muffins when they are still warm, and the Nutella just oozes out.

How to Make Nutella Filled Muffins

When I make Chocolate Muffins with Nutella Filling I follow the same recipe as my lemon muffins. 

Just with slightly different quantities, because the lemon ones have extra liquid with the lemon juice, and these Muffins Filled with Nutella have extra dry ingredients with the cocoa powder.

I always make muffins with veg oil and buttermilk.

I know some people use yoghurt, but I find that buttermilk and oil just give your Easy Nutella Muffins a gorgeous texture, and keeps them fresh and soft for longer. 

You can make these Nutella Filled Chocolate Chip Muffins without the chocolate chips. Just skip them entirely. 

You could also add milk or white chocolate chips or a combination of all three

You can also skip the cocoa if you want, and either make just chocolate chip muffin batter or even completely plain.

If you skip the cocoa, make sure you substitute in extra self-raising flour and add 1tsp of vanilla extract for flavour.

How Do You Put Filling in Muffins?

When I make this recipe for Nutella Stuffed Muffins, I put the Nutella in before I bake.

I add a big dollop of chocolate muffin batter to the cake tin, then spoon in a big tsp of Nutella, before covering it with another tbsp of muffin batter. 

This doesn’t have to be neat or tidy, it’ll all move together as it bakes. 

You don’t need to freeze the Nutella for Nutella Filled Muffins like you might want to for Nutella filled cookies,which are much thinner. You can just spoon it in and cover it up. 

Making Jumbo Nutella Muffins

I think my Chocolate Chip and Nutella Muffins are pretty big. They aren’t small!

I just use normal cake cases in a regular muffin tin. But I bake for 10 minutes at 200 degrees (fan assisted) so that they rise quickly into a dome and the top sets.

Very much the opposite of the nice even bake you want with a cupcake.

Then, I reduce the temperate to 160 degrees for the remaining 10 minutes (you might need a bit longer). 

For a jumbo version, it’s also important that you really fill the cake cases or hole in the tin. For cupcakes, I fill to around 2/3rds. Muffins, fill as close to the top as I can for nice big muffin tops. 

If you want even bigger Nutella Stuffed Double Chocolate Muffins, you’ll need to use a tin with larger holes, still fill to the top and bake for slightly longer.

Making Mini Nutella Muffins

You can also use this Recipe to make mini muffins. Again, just use a different shape tin, and bake for less time. 

I wouldn’t start at 200 for mini muffins, as they’ll cook much faster. 180 for 5 minutes before reducing to 160 should do, but with different sizes (and your oven not being my totally crazy one!) there might be an element of trial and error when it comes to times and temps. 

How Do I Make the top of My Muffins Crack?

I always find this a little bit random, to be honest.

Things like not overmixing your batter (to the point that it’s ok if it’s a little bit lumpy still!) filling to the top, starting at a high temperature, and using the right ingredients in your Nutella Stuffed Muffins Recipe help.

But, in all honesty in one batch of Chocolate Chip Muffins with Nutella Centres while all of my muffins dome, some crack on top like bakery muffins, others don’t.

They all taste the same and have the same textures. I think it’s often as simple as where in the tin they are placed. 

If you add a crumble top, like I do with my Rhubarb Muffins, it doesn’t really matter.

Can You Make Nutella Muffin Mix?

Personally, I prefer chocolate chip batter, with Nutella in the middle.

But, you could make Nutella Muffin batter (either with or without chips) instead.

If I was doing this I’d probably make a plain batter without cocoa, with just a tsp of vanilla, and kinda swirl Nutella through, so you get an almost marble effect. Start with 100g and see how it looks.

Ingredients
 
 

  • 325 g Self Raising Flour
  • 50 g Cocoa
  • 2 tsp Bi-Carbonate of Soda
  • 150 g Caster Sugar
  • 2 Eggs
  • 240 ml Buttermilk
  • 130 ml Vegetable Oil
  • 200 g Dark Chocolate Chips
  • 200 g Nutella (or supermarket own)

Instructions
 

  • Preheat the oven to 200 degrees C (fan-assisted) and line a muffin tin with cake cases.
  • Toss together the flour, cocoa and bicarb, until well mixed.
  • In another bowl whisk together the eggs, buttermilk, oil, and sugar for a few minutes.
  • Pour these wet ingredients into the dry ingredients and mix together until the batter is smooth (around 2 minutes with an electric whisk) but don’t overmix, a few lumps are fine.
  • Gently fold through the chocolate chips.
  • Spoon 2 tbsp of muffin mix into each cupcake case.
  • Add a big teaspoon of Nutella.
  • Top with another tablespoon of muffin mix.
  • Bake at 200 degrees for 10 minutes, before reducing the temperature to 160 for 10-15 minutes.

Notes

  • If you don’t have buttermilk, add 2tbsp lemon juice to normal milk and leave it on the side until it’s at room temp.
  • Muffins are ready when the tops are domed and still bounce back a little when pressed. You can also use a skewer to check that the centre is cooked, trying your best to avoid the Nutella middle.
