Delicious Leftover Roast Pork Recipes

Roast Pork with stuffing, apple sauce, roast veggies and potatoes is a fantastic Sunday lunch option, and roast pork sandwiches on Monday are always good. But if you want to make your meal go further, these leftover roast pork recipes are delicious!

I’ve always liked pork. Cooked well it’s delicious, and now that lamb, beef, and frankly, most other things are so expensive, pork will definitely be something that we’re eating a lot more of. 

I think most people have pork sandwiches with their leftovers, and there’s absolutely nothing wrong with this. A pork and stuffing sandwich is absolutely delicious. 

But if you are trying to save money and cook family meals on a budget, buying a big piece of pork and using the leftovers to make another filling family meal can be an excellent option. 

Even better, you can use leftover veg and potatoes to make bubble and squeak or Patatas Bravas for yet another family dinner!

The recipes included in this post are some of my favourite ways to use up leftover roast pork, but they are also super easy family dinners in their own right.

How to Store Leftover Roast Pork?

I’m absolutely not an expert, and if I have any doubts, I use this guidance.

But, like most meat, as long as it was in date and thoroughly cooked, you can keep pork in the fridge (between 0 and 5 degrees c) for 2-3 days. 

Just remove it from the cooking tray and leave it on the side to cool quickly before popping it in a sealed tub in the fridge. 

It’s best to use it the day after if you can, but it should be fine for an extra day, as long as it’s still in date. 

If your meat is slimy, looks or smells bad, or is discoloured, or if you have any doubts at all, trust your instincts and throw it away. 

Can You Reheat Leftover Roast Pork?

Yes. I find the best way to reheat leftover meat, whether it’s porkbeeflamb or chicken, is to cook it again, slowly in a sauce either on the hob or in the oven. That’s why things like stewscasseroles and curries are so perfect for using up leftovers. 

However you choose to reheat roast pork, make sure it’s piping hot all of the way through before serving.

What Can You Make with Leftover Pulled Pork?

I absolutely love pulled pork. I have some recipes that include pulling leftover roast pork, which are ideal if you’ve got some leftover pulled pork too.

What Can You Make with Tough Leftover Pork?

Leftover meat can be tough, dry and chewy. This is more likely if the meat was overcooked in the first place. 

But that doesn’t mean that you need to throw it away. 

To give tough pork new life, just like using up tough leftover roast beef, I recommend either pulling it apart, or chopping it up into small pieces, and then cooking it slowly in a sauce or gravy. Something like a leftover roast pork stew is perfect if your leftover pork is tough.

What Leftover Roast Pork Recipes Can You Make if You Haven’t Got Much Pork?

Of course, it’s easy to make a big family meal if you’ve got plenty of meat. 

But when you are cooking with leftovers it’s often a case of making the most of what you’ve got.

If I don’t have much leftover pork, I find the best options are either the recipes like BBQ flatbreads, where you can pull the pork, which makes it go further, and top it with cheese but also where you can serve with lots of sides like salad and coleslaw, and the bread is already fairly filling, or things like fried rice, where you can add lots of veg to bulk it out. 

Often, if you want to make something like a hotpot with your leftovers, the best thing to do is add extra veggies to bulk it out.

Awesome Leftover Roast Pork Recipes

Recipes for pork leftovers are some of my favourites, and many of my other recipes can be easily adapted to use up leftover pork. These are some of the leftover pork recipes we eat most often, and most of them can also be used for Leftover Pork Tenderloin.

Leftover Pork with Sweet and Sour Sauce

When it comes to Leftover Roast Pork Recipes Sweet and Sour has got to be one of the best. A simple sweet and sour sauce is a great way to turn leftover meat into a fab dinner, and it’s super easy to make. Serve with rice or noodles for a yummy dinner.

Leftover Roast Pork Stew

stew is always one of my favourite ways to use up leftovers. Cheap, easy and perfect if you don’t have much meat and you need to bulk it out with veggies or potatoes.

Hotpot

I always think that a hotpot is like a stew or a casserole, but the potatoes form a kind of lid, giving you a nice crunchy top, and gorgeously tender meat. Kind of like a cottage pie, but with crispy potato slices instead of mash. 

My hotpot recipes are for sausagelamb or beef, but you could use pork instead.

Leftover Pork Pasta

I love pasta. I could eat it every day for a while I think. Whether you’ve got leftover chickenlambturkeybeef or pork, a simple pasta sauce is a great way to turn it into another meal, and you can always add some garlic bread and salad if you need to.

Pasta Bake

What’s better than pasta? Pasta topped with cheese and baked! Pasta bake is one of my favourite easy midweek meals, and perfect for using leftovers.

Pork Fried Rice

Fried rice is one of my easy favourite dinners, for those nights when you don’t fancy cooking or haven’t got anything planned. It’s great with leftovers, but I’m not going to lie I’d happily serve fried rice with some cooked chicken nuggets out of the freezer!

Pulled Pork Flatbreads

Flatbreads with BBQ sauce, pulled pork and lots of cheese are super tasty and easy to make. The kids think that they are funny pizza and absolutely love them.

Pork Chow Mein

Leftover Roast Pork Recipes Chinese style, like my chow mein, are always tasty, and again easy to bulk out with veg. My kids love chopsticks, so anything with noodles is a hit.

Leftover Roast Pork Stroganoff

I love stroganoff. Pork, and beef stroganoff are regulars on our meal plans and using leftover meat is a great idea.

Risotto

Risotto is gorgeous, and something that my kids actually really like, especially when it’s made with sausages! My leftovers recipe is for chicken risotto but would work just as well with pork.

Burritos

Leftover Pork Recipes Mexican options are always popular, and we love Mexican food. My burrito recipe uses beef or sausage, but you can absolutely swap it for pork.

Goulash

My goulash recipe is beef, but pork goulash is yummy too. This spicy paprika stew is ideal for tough meat.

Leftover Pork Curry

Leftover pork curry is creamy, delicious, super easy to make and a great way to save money and reduce waste. It’s one of my absolutely favourite Monday night dinners.
