Air Fryer Fruit Scones

I love scones. When I was a kid, I’d always insist on plain ones and would only eat raisins in chocolate (still the best part of Pic n Mix!), but now I probably prefer them fruity. 

They’re a traditional part of afternoon tea and the perfect easy afternoon snack. There’s something very British about a fruit scone!

The good news is, scones aren’t as delicate as cake, so if anything, they’re even easier to make in your air fryer, and even if they are slightly under or overdone, or they don’t rise quite as much as you’d hoped, they’ll still be delicious. 

I say this as someone who makes a lot of scones and got a lot a little bit wrong while working on this recipe. They were all delicious, and even the rejects were enjoyed!

Why I Love Air Fryer Fruit Scones

Air fryer fruit scones are brilliant because:

  • They’re meant to be a bit crumbly. You can’t really get them wrong, just a bit less right!
  • Air fryer scones taste amazing. Seriously, they are delicious. 
  • This is a small-batch fruit scone recipe. It makes 3-4, depending on the size of your air fryer, so you don’t need to worry about them going stale. 
  • They’re perfect for afternoon tea.
  • Easy Air fryer fruit scones are super easy; you don’t need fancy ingredients, and they’re ready in about 15 minutes from start to finish. 
  • You can eat them warm, so you don’t even have to wait! Just remember, if you cut them while they are warm, the texture might look a little off. They’ll still taste great.

Ingredients For Air Fryer Fruit Scones

When I make fruit scones in air fryer, I use:

Self Raising Flour 

Baking Powder

Butter – You can use margarine, but I think the taste and texture are better with butter. 

Caster Sugar

Raisins – Or sultanas. Most recipes call for sultanas, and air fryer sultana scones are great. But my kids eat raisins like mad, so we usually have some in. 

Milk – Semi Skimmed or whole milk are fine. 

Vanilla Essence

Lemon Juice – The vanilla and lemon aren’t absolutely essential, but they give you that fantastic buttermilk texture that’s perfect for scones.

When I make my recipe for fruit scones in the air fryer, I use:

  • Air Fryer with Crisper Tray. 
  • Mixing Bowl
  • Jug 
  • Knife
  • Pastry Brush
  • Baking parchment

How to Air Fry Fruit Scones – Step-by-Step Instructions

Full, easy-to-follow instructions and quantities are available in the recipe card at the bottom of this post.

Step One

Mix the milk, vanilla and lemon juice in a jug. You can just use buttermilk instead if you have it, but adding a bit of lemon to your milk and leaving it to stand has the same effect.

Step Two

Place the flour, baking powder and cubed cold butter in a mixing bowl. 

Step Three

Rub with your fingers until it resembles fine breadcrumbs. Try to get rid of any big lumps, and make sure you dig right down to the bottom so there’s no flour left un-rubbed at the bottom.

Step Four

Stir in the caster sugar and raisins.

Step Five

Pour the milk into the flour. 

Mix well with a blunt knife until it starts to come together. It doesn’t need to be perfectly smooth.

Step Six

Knead into a ball with your hands. 

Step Seven

Preheat the air fryer to 186 degrees C and set it for 11 minutes. If your air fryer doesn’t have a preheat setting, just set it for 13 minutes and put the food in when it gets down to 11. 

When it comes to what temperature to cook scones in air fryer, I’d probably do 185 degrees C if I could. By my machine goes up in twos!

Step Eight

Lightly dust a surface and roll the dough out to about 2 cm thick. Scones rise a bit, but not like a fluffy sponge cake, so you want them fairly thick when they go in. 

Step Nine

Cut 4 scones with a 6cm cutter, re-rolling the dough when needed. My cutter is a little bigger, so I often only get three scones from this recipe. Between 5 and 6 cm is best. It can be straight or fluted. 

Step Ten

Place a sheet of baking paper on the crisper tray of your pre-heated air fryer basket and place the scones on the paper, flipping them over so the bottom when you rolled is now the top. Flipping them over helps them to rise. 

I’ve got a sheet of reusable paper I’ve cut holes in to help the air circulate. I use it for things like scones and cookies. 

Alternatively, you can brush the crisper tray lightly with oil and pop them straight on. 

Make sure you leave a little space between them, and never put the paper in before the scones. It needs something on top to hold it down, or it will blow about and catch fire. 

Step Eleven

Brush with milk. This isn’t essential, but it helps you get a lovely golden brown finish.

Step Twelve

Air fry for 9 minutes. 

Step Thirteen

Carefully flip the scones over and air fry for two more minutes. The air fryer cooks the top faster than the bottom. Flipping helps ensure you get an even bake. 

Step Fourteen

Leave them in the air fryer basket for a few minutes before removing them carefully to cool on a wire rack.

Serving Suggestions

Ideally, I’d always serve air fryer fruit scones with jam and clotted cream. Spread it in any order you like!

But even just a bit of butter will do.

Storage 

Store your air-fried fruit scones in a sealed tub on the kitchen side. They don’t need to be kept in the fridge.

FAQ

Can You Cook Scones in an Air Fryer?

Yes.

Do Fruit Scones Have Eggs?

No. While you can make scones with an egg, I prefer not to. They aren’t cake.

How Long Do You Cook Scones in the Air Fryer?

It takes around 11 minutes to cook scones in the air fryer.

Why Don’t My Fruit Scones Rise?

If your scones don’t rise, try adding more milk, preheating your air fryer for longer, checking the date on your baking powder and making sure you aren’t over-mixing.

Are Air Fryer Fruit Scones Healthy?

Scones themselves aren’t particularly unhealthy. It really depends on what you put on them.

Notes

  • I recommend using a sheet of baking paper with holes to help the air circulate.
  • Never put paper in the air fryer without anything on top to hold it in place. It will fly up, catch the element and set fire. Preheat first, then put the paper in, topping it with the scones before placing it into the air fryer.
