What to Do with Leftover Roast Potatoes

I love roast potatoes. Possibly more than meat. So, I always do loads, and there are tons left over. Here are some of my favourite leftover roast potato recipes!

Like the meat is great and everything, but roast potatoes and roast vegetables like carrots are parsnips are my favourite parts of Sunday dinner and Christmas dinner. 

I love the crispy golden outside and fluffy middle.

Roast potatoes are absolutely delicious, and while we often have mashed potatoes or roasted sweet potatoes, and sometimes even boiled new potatoes, roasted potatoes are always my favourite. 

To be honest, if there are only a few left, my favourite thing to do with leftover roast potatoes, and any other leftover veggies, is to warm them up in the oven and eat them with a sandwich the next day.

But if there are plenty left there are plenty of other fantastic ways to use up leftover roast potatoes!

Can You Eat Leftover Roast Potatoes?

Yes! As long as your potatoes were okay when you cooked them, you can absolutely eat leftover roast potatoes! In fact, you absolutely should, to avoid waste, and because they taste amazing!

How Do You Revive Leftover Roast Potatoes?

The thing with leftover potatoes I find is that their crispy outer layer protects them, and they can be eaten the next day without much work. 

I’d even eat them cold. 

The only thing that I’d personally say, is if they’ve been roasted in lots of oil, dab them off with a sheet of kitchen roll, or at least remove them from the baking tray to cool, before putting them in the fridge.

This is just so they aren’t sitting in oil, which could leave them a little soggy and not lovely and crisp. 

If for any reason your roast potatoes are dry or otherwise need reviving, I’d choose something with a sauce, like a patatas bravas to give them some life. 

Another option is pan frying in a little oil, instead of oven baking, which will dry them out further. 

How Long do Leftover Roast Potatoes Last?

In the fridge, leftover cooked potatoes will last for 3-4 days. Frozen, much longer, and at least 2 months. 

Storing Leftover Roast Potatoes

Remove them from the cooking pan and cool them on the side before sealing them in an airtight tub. 

You can use them directly from the fridge when you are ready. 

Can You Freeze Leftover Roast Potatoes?

Yes, you can freeze leftover roast potatoes from your Sunday dinner. Again, leave them to cool out of the cooking tray, before sealing them in an airtight tub or bag. 

Freeze, and thaw in the fridge when you are ready to use them. 

Hash with Leftover Roast Potatoes

If I’ve got lots of leftover roast potatoes and veg, a hash is absolutely my go-to Monday lunch. 

I often like to make a meal with the leftover pork, chicken, beef, or lamb, but I’ll have the veg and potatoes for my lunch, with a bit of meat if there’s enough, or on its own. 

This recipe is for leftover turkey hash, which is great for Christmas dinner leftovers, but you can skip the turkey, or replace it with another meat. 

I always think of potato hash as a chunky bubble and squeak – which is perfect for leftover mash potatoes and a great family dinner!

Breakfast Hash

Leftover Roast Potatoes for breakfast? The only time I really have potatoes for breakfast, it’s in the form of hash browns, and even that isn’t often. 

But I know chips and other potatoes are a popular addition to a full English and there’s absolutely nothing to stop you from making a breakfast hash. 

I’d chop your roast potatoes into cubes and pan-fry in a little oil. You could add some bacon, chopped-up sausages (or serve them on the side) or mushrooms, and serve with eggs for a yummy and filling breakfast. Easy!

Patatas Bravas

One of my favourites!

Potatoes, chorizo and eggs individually are up there with my favourite foods, so all together with a spicy tomato sauce, yes, please!!

This recipe is perfect for roast potatoes, as a side or as a meal on its own. 

Leftover Roast Potato Burritos

So, this might be a bit outside the box. But rice and potatoes are interchangeable as sides, so why not!

Follow my burrito recipe, but instead of rice, chop your potatoes into small cubes and pan fry for a few minutes until hot. Add to a wrap with chilli, and all your favourite dips, cheese and salad, and wrap.

Honestly, it sounds weird, but you have chilli with jacket potatoes! Leftover roast potato burritos are amazing!

Gammon Leek and Potato Pie

Gammon leek and potato pie is a great way to use leftover gammon, but you can also add leftover potatoes instead of cooking more.

Salad

Chop your roast potatoes and add to a salad, either fried until crispy, or cold! Like croutons!

Potato Salad

I love potato salad, and there’s no reason you can’t make it with roast potatoes. Yes, the crispy outside changes the texture a bit, but it works!

Chop your potatoes into small chunks and leave cold in a bowl. I add 3 parts mayo and 1 part salad cream (how much you’ll need will depend on how many potatoes you have left!), with a pinch of salt and pepper and some chopped fresh chives and mix it all together. 

You can also add onions and other herbs and spices for different flavours. 

Leftover Roast Potato Curry

I love potatoes in curry! If you want to make something like leftover roast beef curry, but you are short on beef, add some chopped-up roast potatoes, about 5 minutes before you serve, so they’ve got time to warm up, but not long enough that they’ll fall apart, is ideal. 

You can also make a curry with leftover veg and potatoes if you don’t have any meat.

Bombay Potatoes with Leftover Roast Potatoes

Another option is using your potatoes to make Bombay potatoes as a side to serve with your curry.  This recipe is fab!

Reheat as a Side

As I said at the start, roast potatoes and roast veggies make a fab side as they are, either cold straight out of the fridge, or warmed on a baking tray in the oven for 5-10 minutes at 160 degrees C. 

Pan Fried Leftover Roast Potatoes

If you prefer pan-fried potatoes, I recommend chopping them into small cubes. 

Heat a little oil, butter, or cooking spray in a large, non-stick pan over a medium heat. Add your potatoes and fry, tossing often, until they are warm, and the edges are crispy.

If you do pan fry, you can add some salt and pepper or something like Cajun seasoning for a bit of spice!
