I love making curry at home. Whether it’s a curry with leftover beef or lamb, or a healthier take with added sweet potatoes, they are yummy. 

Homemade fakeaway curries are cheaper, healthier, and often tastier than takeouts. And, if you are cooking family dinners, making your own curry gives you a great chance to tailor the ingredients and the spice level to your family’s needs. 

Mine don’t mind spicy food really, but we still tend to make our homemade curries fairly mild. 

The only problem is, sometimes homemade curries take a fair bit of time, and they often contain a lot of different spices and ingredients that you might not have in your store cupboard. 

This easy chicken curry is a little different. It’s an easy curry recipe!

A Family Chicken Curry Recipe that’s ready in 30 minutes, takes very little effort, and doesn’t contain half as many ingredients as many others!

I think it’s the perfect Curry for kids!

How to Make an Easy Chicken Curry at Home

This Easy Chicken Curry Recipe has no grinding of spices, mixing of pastes, food processing bases. Nothing.

I use cooked chicken, and aubergines for a super simple, filling and healthy curry.

You can use leftover roast chicken if you have any. I also use frozen chicken breasts, which I cook in the oven beforehand. You can also use store-bought cooked chicken strips.

How to Thicken Homemade Curry Sauce

If after 30 minutes the curry sauce is a little too watery, either leave it to simmer for a little longer, or mix 1tbsp of cornflour with 1tbsp water and stir this through. 

On the other hand, if it’s too thick at any point, simply stir through a little water.

An Easy Curry Recipe for Kids

This is a great Kids Curry because it’s fairly mild. But, also because it’s quick, easy and cheap. So, even if they don’t like it you aren’t wasting tons of money and time. 

An Easy Chicken Curry with Greek Yoghurt like this is ideal for kids because if it’s too spicy you can add a little more yoghurt before serving to tone down the flavour. 

It’s a great Basic Chicken Curry that’s ideal for trying with kids, or for making curry at home for the first time. 

Adding aubergine is also a great way to get your kids eating more veg. Chicken and aubergine curry works really well, because aubergines are juicy and take on the flavour of the curry sauce really well.

However, if you don’t like aubergines, you can just skip them.

What Can You Use Instead of Ghee?

I love ghee. It smells and tastes exceptional.

If you haven’t got any swap it for butter.

Substitutions for Curry Powder

I use 2tbsp of mild curry powder in this recipe. Curry powder is great to have in. It’s such as easy way to add flavour not just to your curries, but also to any other spiced dish you might want to try. 

However, if you can’t or don’t want to use curry powder you can substitute it for Garam Masala. 

Garam Masala has a sweeter taste than curry powder, but it’s a really lovely flavour that will boost any homemade chicken curry.

How Do You Know When Chicken Curry is Cooked?

As long as the chicken is piping hot your curry is safe to eat. It’s also a good idea to taste the aubergine before serving. If the skin is too tough, simmer for a little longer, adding more water if you need to.

To be honest, I’d probably serve everything with homemade naan bread, or flatbread if I could. Rice is always a staple too.

How Long Does Chicken Curry Last in the Fridge?

If you are using leftover chicken to make this easy curry, then I wouldn’t keep it after this. This is the second time you’ve cooked the meat, and every time you cool and reheat, the risks grow.

If you are using fresh chicken, this easy chicken curry will be ok in the fridge, in a sealed tub for 2-3 days, as long as the meat was in date when you cooked it. 

You can also freeze leftover chicken curry. Either way, just make sure you reheat until it’s piping hot before serving, adding a little more water if you need it.

Ingredients
  

  • 1 Tablespoon Ghee
  • 4 Spring onions (Finely Sliced)
  • 3 Cloves Garlic (Crushed)
  • 4 Cooked Chicken Breasts (Chopped into small chunks)
  • 1 Medium Aubergine (Topped and tailed and chopped into 1-2cm chunks)
  • 400 g Chopped tomatoes
  • 200 g Greek yogurt
  • 100 ml Water
  • 2 tablespoon Mild curry powder
  • 1 teaspoon Ground Coriander
  • 1 teaspoon Ground Ginger
  • 2 teaspoon Ground Turmeric
  • Pinch Salt and pepper

Instructions
 

  • Melt the ghee in a large frying pan on the hob.
  • Add the onions and garlic and fry for 5 minutes.
  • Add the cooked chicken and aubergines and stir until coated in ghee.
  • Pour in the tomatoes, water and yoghurt and stir together well.
  • Stir through the curry powder, turmeric, ginger and coriander.
  • Bring to a simmer and cook for 30 minutes, stirring often.
  • Add salt and pepper to taste.
  • Serve.

Notes

  • Serve with rice and/or naan for a filling family meal.
  • Swap Ghee for Butter if needed.
  • Skip the aubergine if you prefer.
