Ingredients For Terry’s Chocolate Orange Rocky Road
One of the best things about Rocky Road is the flexibility. This is what I use, but you can throw anything in!
Milk Chocolate
Dark Chocolate
Orange Chocolate – so, I use a combination of all three chocolates. This is in part because chocolate oranges are expensive when you need 5 of them! But I also like the flavour. As long as you’ve got around 600g of chocolate in total here, it can be in any combination.
Butter – you can use margarine, but butter is always better where possible.
Golden Syrup
Mini Marshmallows
Digestive Biscuits – you can absolutely try anything with a crunch.
Orange Matchmakers – I love the texture of this addition, but you could skip them, or even try adding other orange chocolate treats.
Terry’s Chocolate Orange Segments – you can skip there, and the white chocolate and orange colouring if you aren’t bothered about decoration.
White Chocolate
Orange Food Colouring – I recommend good quality, you need less for a bright colour, so it doesn’t affect the taste or texture. I find supermarket food colouring can taste a little chemically.
You’ll Also could also add some orange sprinkles for extra fun.

You’ll Also Need
I use a 10×8 inch brownie tin with reusable paper. I’ve also made this in an 8×8 tin but it’s too deep to eat comfortably!
I also use a large mixing bowl, a saucepan and a wooden spoon.

How to Make Orange Chocolate Rocky Road– Step-by-Step Instructions
Step One
Place the milk chocolate, dark chocolate, orange chocolate, butter and syrup in a pan and carefully melt over a low heat. You can use the microwave in short bursts, or a Bain Marie if you prefer.

Step Two
Once melted set to one side to cool.
Step Three
In a large mixing bowl, break the biscuits into bites. They shouldn’t be too small, and they don’t need to be even.
Step Four
Add the marshmallows and broken matchmakers. Mix well. I do this with my hands.

Step Five
Prepare a tin. Mine is around 10×8 inches and I use reusable baking paper, Rocky Road can be hard to get out.
Step Six
Pour around two-thirds of the cooled chocolate mixture into the digestives and stir well, making sure everything is covered in chocolate. If you don’t want a neat top, add it all now.
Step Seven
Tip into the tin and spread out evenly.
Step Eight
Add the remaining chocolate, spreading evenly so that everything is covered.

Step Nine
Place in the fridge for around an hour.
Step Ten
Carefully melt a little white chocolate in a Bain Marie or the microwave. Stir in a little orange food colouring. You can skip all of this if you prefer.

Step Eleven
Roughly drizzle over the Rocky Road with a spoon or piping bag.
Step Twelve
Press on the chocolate orange segments to decorate.

Step Thirteen
Return to the fridge for at least an hour before removing from the pan and slicing carefully. Ideally, leave it for a few hours.

Storage
Store your orange Rocky road in an airtight container for 2-3 days. The biscuits will start to soften, but it will still be fine to eat.
FAQ
You can try removing it from the heat and slowly stirring in a little butter, teaspoon at a time. You can also try adding chocolate, melting it in squares at a time.
You can, but I prefer to use orange chocolate.

Notes
- 180g + 16 segments is 2 full Terry’s Chocolate Oranges
- 120g Matchmakers is a full box
- I recommend putting the matchmakers in the freezer for an hour or so, so that they don’t melt when you pour in the still-warm chocolate.
- I like a combination of milk and dark chocolate, but you can use just one. If so, you’ll need 400g.
- The white chocolate drizzle is optional; if you aren’t using it, press the decorative segments into the top before it’s fully set. I use Pro gel food colouring.
- I melt my chocolate directly in a pan, but you might find a Bain Marie (double boiler) or the microwave easier. I would certainly recommend this when using white chocolate.
