Creme Egg Rocky Road is the perfect no-bake chocolatey Easter treat. Ideal for making with kids!

Rocky Road is such a great thing to make at Easter. It’s perfect for making with the kids, as it’s really good fun breaking everything up and mixing it all up together.

Creme Egg Rocky Road is a fab No-Bake Fridge Cake. It’s ideal if you’ve got lots of creme eggs going spare, or you are looking for something a little different this Easter.

It’s also the perfect thing to make if you are all getting a little bored in quarantine.

I love all Rocky Road. It’s crunchy, chocolatey and filled with lots of my favourite things.

I absolutely adore biscuits, and to be honest I like to think that Creme Egg Rocky Road is basically a pimped up super biscuit. Perfect!

I use mini creme eggs when possible. But you can use full-sized ones if you prefer.

Rocky Road Variations

I tend to stick to raisins, marshmallows, and digestives, but I know a lot of people prefer the crunch of a rich tea.

You can add glacé cherries, nuts and pretty much anything else too. Such is the beauty of Rocky Road.

You can, of course, use other chocolates if you prefer. Mini Egg Rocky Road is another favourite of ours.

How Long Does Creme Egg Rocky Road Take to Set?

Fridge cakes are fantastic because you don’t have to cook them. But, you do still have to wait for them to set.

If you can’t wait, pop your fridge cake in the freezer for an hour or so. In the fridge, it will need a bit longer.

I’d say around 4 hours, maybe even overnight. It really depends on your fridge.

I’d recommend waiting until it is fully set before removing from the tin and slicing, it will be much easier. I also use baking paper, which makes it much easier to remove.

How Long Does Rocky Road Last?

For a really good slice of Rocky Road, you want a good crunch. If possible, keep your sliced Creme Egg Rocky Road in a sealed tin or tub, like a biscuit tin to keep it fresh.

It will stay crunchy for about three days. I wouldn’t put it in the fridge.

Ingredients
  

  • 100 g Butter (or Margarine)
  • 200 g Dark Chocolate (Broken into squares)
  • 200 g Milk Chocolate (Broken into squares)
  • 100 g Golden Syrup
  • 125 g Digestive Biscuits (Broken into large pieces)
  • 50 g Raisins
  • 150 g Mini Marshmallows
  • 180g Mini Creme Eggs (Sliced in half)

Instructions
 

  • Grease and line a deep baking tin.
  • Mix the biscuit, raisins, mini marshmallows, and mini Creme Eggs in a large mixing bowl, retaining a few eggs to decorate.
  • In a saucepan over a low heat, melt the chocolates, syrup, and butter until smooth.
  • Remove from the heat and leave to cool for around 5 minutes before pouring onto the filling.
  • Fold together quickly until the filling is well-coated.
  • Tip into the baking tin and press out into the sides.
  • Add the remaining eggs to the top, creme side up.
  • Cool in the fridge for 2 hours before removing from the tin and slicing.

Notes

  • I find that freezing the Creme Eggs for an hour before I need them helps them to hold their shape and makes them easier to slice.
  • You need 2 packets of mini creme eggs for 180g.
