Pork Sausages
Carefully pricked with a sharp knife

Good Pinch of salt and pepper

Instructions
Preheat the oven to 180 degrees.
Place your sausages on a large, deep baking sheet.
Add the sliced peppers, courgettes, onions, garlic, tomatoes and potatoes.
Drizzle with oil.
Sprinkle with salt, pepper, rosemary, and sage.
Bake in the oven for 25 minutes before removing to gently toss.
Return to the oven and bake for a further 20 minutes, until the sausages are brown, the potatoes are soft and the peppers and roasted and sweet.
Notes
To reduce fat content, use a lower fat sausage, or switch cooking oil for a calorie-controlled spray.
