A Salmon Traybake is a quick midweek meal that’s cheap, easy, and full of flavour and nutrition. Add all of your favourite veggies for a fantastic family roast.

Ingredients
4Salmon Fillets
250gNew Potatoes Sliced into 3mm rounds
1Red Pepper Sliced into 8 Chunks
1Red Onion Sliced into 8 Chunks
12Cherry Tomatoes On the vine broken into 3’s
12Asparagus Spears or Tips
2tablespoonOlive Oil
1teaspoonTarragon
1teaspoonParsley
Good Pinch of Salt and Pepper
Instructions
Preheat the oven to 180 degrees.
Place the potatoes and veg on a large baking sheet.
Drizzle with oil and sprinkle on the tarragon, parsley and salt and pepper.
Bake in the oven for 20 minutes.
Remove from the oven and toss.
Nestle on the salmon fillets, and brush lightly with oil, and add a tiny bit more tarragon and parsley.
Bake for a further 20 minutes until the salmon is cooked and the potatoes are soft.
Notes
I often use frozen salmon fillets, in which case I nestle them on before the first bake and before drizzling with oil and herbs. After 20 minutes, carefully remove the salmon, toss, and then return the same before baking for 20 more minutes.
