Sausage and baked bean pasta with carrots is a such simple, but fabulously delicious midweek dinner that’s perfect for kids!

8Pork Sausages
250gPastaSomething like Penne, Rigatoni or fusilli is great
1OnionFinely Diced
3ClovesGarlicCrushed
1Orange or Red PepperDiced
2Large CarrotsPeeled and Sliced
415gTin Baked Beans
400gChopped Tomatoes
Salt and pepper
100gCheddar CheeseGrated
100gMozzarella CheeseGrated
Instructions
Cook the sausages to packet instructions, and leave to cool slightly before chopping into 1cm chunks. Leave to one side.
Cook the pasta to the packet instructions, but for about half of the time.
Drain and rinse in cold water. Leave to one side.
Mist a large, heatproof and flameproof pan with cooking spray and warm over medium heat on the hob.
Add the onions and fry for 5 minutes until soft. Stir often.
Add the garlic and cook for a further 2-3 minutes, stirring often.
Tip in the carrots and pepper and stir well.
Add the beans, chopped tomatoes and a pinch of salt and pepper and stir well.
Bring to a simmer and reduce the heat.
Simmer for 10 minutes, stirring often.
Remove from the heat and stir in the sausages and pasta.
Top with grated cheese and bake at 180 degrees C (fan-assisted) for around 20 minutes, until the cheese is golden brown.
Notes
I use a large cast iron Dutch oven dish. If you don’t have a pan that is both flameproof and heatproof, start in a large frying pan on the hob before transferring to an ovenproof casserole dish to bake.
