40gButter
1TeaspoonGarlic Puree
40gPlain Flour
500mlSemi-Skimmed Milk
150gMature Cheddar Cheesegrated
100gMozzarellagrated
1TeaspoonSmoked Paprika
1TeaspoonChilli Powder
1TablespoonDijon Mustard
PinchSalt and pepper
6Hotdog SausagesSliced into thin rounds - the pre-cooked kind
200gMacaroni Pastastraight or elbow macaroni
Instructions
Cook the macaroni according to the package instructions.
Drain, rinse and set to one side.
Melt the butter and garlic in a large, flameproof pan over medium heat on the hob.
Reduce the heat and add the flour.
Whisk for 1-2 minutes until it becomes a smooth ball.
Slowly add the milk, whisking in a bit at a time to avoid lumps.
Increase the heat and simmer for 3 minutes, whisking constantly.
Remove from the heat.
Preheat the oven to 180 degrees C (fan-assisted).
Whisk in the salt and pepper, dijon mustard, paprika and chilli.
Fold in the slices of sausage.
Fold in most of the cheeses, retaining a handful of each to top.
Stir in the pasta until it’s covered in cheese sauce.
