Instructions
Boil the potatoes in lightly salted water for about 20 minutes until softened.
Drain thoroughly and return to the pan.
Place over a very low heat and toss for 2 minutes until they have dried. Add 100g milk, 80g butter and a little salt and pepper.
Remove from the heat.
Mash well and leave to one side.
In a large saucepan, warm 25g butter, flour, spring onions, and dill over medium heat until the butter has melted, stirring often.
Cook for two minutes, stirring often.
Add 400ml bit at a time, whisking thoroughly as you go.
Simmer for 5 minutes until thick, whisking constantly.
Remove from the heat and stir through the Dijon mustard and a pinch of salt and pepper.
Add the fish and peas and stir well to break up some of the fish.
Tip into a deep baking dish or basket that comfortably fits in your air fryer.
Preheat your air fryer to 180 degrees C and set for 35 minutes.
Layer the sliced hard-boiled eggs on top of the fish.
Top with mashed potato and sprinkle over cheddar cheese.
Bake for 15 minutes at 180 degrees C.
Reduce the temperature to 160 degrees C and bake for 20 minutes.
Check occasionally and cover tightly with foil if the top starts to burn.
Check that the fish is piping hot and cook for longer if necessary.
Notes
I recommend using a food thermometer. Your fish should be above 63 degrees C. Check in a few separate areas of the pie. Read the post above for more tips and advice.
I use a fish pie mix pack with smoked haddock, salmon and cod.
