150gMargarine or Butter(Melted)
250gLight Brown Soft Sugar
1Egg
2tablespoonGolden syrup
2teapsoon Vanilla Essence
325gPlain Flour
1.5teaspoonsBicarbonate of soda
250gWhite Chocolate Chips
Instructions
Grease and line 2 baking trays.
Cream together the butter and sugar until fluffy, this takes less than a minute with an electric whisk.
In a small bowl whisk together the egg, syrup, and vanilla with a fork.
Add the egg mix to the butter and sugar and mix for 1-2 minutes until well combined.
Tip in the flour and bicarbonate of soda and mix for 2-3 minutes until the mixture is smooth.
Stir in the chocolate chips carefully until evenly distributed.
Cover the dough and cool in the fridge for 1 hour.
Preheat the oven to 180 degrees C (fan-assisted) and remove the dough from the fridge.
Divide into 18-20 equal balls and place on baking trays (I do 6 per tray, and bake in 2 batches, leaving the leftover dough in the fridge until I need it)
Press down into rounds that are around 5mm thick.
Bake in the oven for 10-12 minutes.
Remove from the oven, leave for a few minutes before removing to cool fully on a wire rack.
If you are baking in batches, leave your tray to cool fully before adding the next lot of cookie dough.
