2tablespoonsCooking Oil
12Pork Sausages
2PeppersDeseeded and chopped into large chunks
1Red OnionPeeled and Chopped into 8 thick chunks
300gNew PotatoesSliced into 3-4mm rounds
PinchSalt and pepper
400gTin Butter BeansDrained
400gTin Chopped Tomatoes
420gTin Baked Beans
150mlChicken Stock
150gFrozen Peas
Instructions
Preheat the oven to 180 degrees (Fan assisted).
Place the sausages, peppers, onions and potatoes in a large, deep roasting tin or another ovenproof dish.
Drizzle with the oil and sprinkle over salt and pepper, toss with a spatula to make sure the oil is well distributed.
Bake in the oven for 20 minutes.
Remove from the oven and stir.
Pour in the baked beans, butter beans, chopped tomatoes and stock.
Stir together well.
Bake for a further 30 minutes, stirring halfway through.
Remove from the oven, stir through the peas, and bake for a final 10 minutes.
