Grease and line a small baking tray or tin, mine is an 8inch square.
Put the biscuits, bubbles, and marshmallows into a mixing bowl and mix up.
In a small saucepan, melt together the butter, sugar, chocolate, and syrup and mix until smooth.
Remove the chocolate mix from the heat, and cool for around 5 minutes, so that it's not too hot when you pour it on.
Pour over the biscuit mix and quickly fold until coated.
Tip into the cake tin and spread into the corners.
Place in the fridge to set.
Melt the white chocolate over a Bain Marie, and mix in a little green colouring, bit at a time until it’s the color you want.
Use the back of a spoon to drizzle the green chocolate over the Mint Rocky Road.
Return to the fridge to set fully.
Notes
I melt the milk chocolate in a pan with the butter and sugar, but I recommend using a Bain Marie for the white chocolate, as it can be more temperamental.
Green topping is optional, you could also crumble up some bits of mint areo and scatter these on the top, before the white chocolate sets.
I cut my Rocky Road into 16 small squares, but you could cut into 8 large rectangles.
