200gClosed Cup MushroomsSliced
1TablespoonDijon Mustard
2TeaspoonsSmoked Paprika
Splash Lemon Juice
200mlVeg stock
150mlSoured Cream

Instructions
Melt the butter in a large, non-stick frying pan over medium heat on the hob.
Add the onions and fry for 5 minutes, stirring often, until they are starting to soften.
Add the garlic and fry for a further 3 minutes, stirring regularly.
Add the mushrooms and halloumi and fry for 5 minutes until the halloumi has started to soften, stirring often.
Stir in the mustard, paprika, and lemon juice until evenly mixed.
Pour in the stock, stir, and bring to the boil.
Reduce the heat and simmer for 2 minutes.
Add the soured cream and parsley and stir.
Simmer for 20 minutes, stirring often, until the sauce thickens.
Notes
Serve with pasta, noodles, potatoes or rice.
I use closed cup or chestnut mushrooms. Other types are fine too.
