Halloumi and Chorizo Traybake
Halloumi and Chorizo Traybake is a super simple family dinner. It’s easy, fast and filled with both flavour and colour. It’s the perfect midweek meal!

Halloumi Cheese
2 Packs each sliced into 4 thick slices, so 8 total

Chorizo

Topped and tailed and sliced into 2-3mm rounds

Red Pepper
Deseeded and chopped into large slices

Yellow Pepper

Peeled and chopped into 8 large chunks

Instructions
Preheat the oven to 180 degrees (fan assisted) and find a large, deep baking tray.
Place the potatoes and chorizo on the tray.
Bake in the oven for 10 minutes.
Remove from the oven - the chorizo should have released plenty of oils – toss well to make sure the potatoes are coated in oil.
Return to the oven and bake for 10 minutes.
Add the courgettes, peppers and onion and mix carefully, so the chorizo oil coats the veg and the potatoes are tossed.
Bake for 20 minutes.
Mix together the olive oil, smoked paprika, oregano, cumin and salt and pepper.
Brush or rub the halloumi slices with this oil mixture and leave on a clean plate.
Remove from the oven and toss well.
Turn on your grill (or change your oven setting to grill) at a medium-high temperature.
Mix the tomatoes in with everything else on the baking tray.
Gently place the halloumi on the top.
Grill for 5 minutes.
Remove from the oven, flip the halloumi over and grill for a further 5 minutes.
Notes
If any small pieces of halloumi break off as you slice, coat these in oil and add them to the tray with the larger slices.
If you prefer crispier halloumi, grill for a little longer.
