Ingredients
Cooking Oil
200gSelf-raising flour
50gCaster sugar
2Eggs
250mlMilk
Instructions
Mix the flour and sugar in a bowl.
Crack in the eggs.
Whisk with an electric whisk until it resembles thick breadcrumbs.
Add the milk, whisking in a splash at a time, until it’s all incorporated.
Whisk until the mixture is smooth.
Leave to stand for 10 minutes.
Heat a little oil in a small frying pan over medium heat until the pan is hot.
Reduce the heat.
Ladle a scoop of pancake batter into the pan and fry for 2-3 minutes until the top is bubbly and mostly set.
Flip carefully and fry the other side for 2 minutes until golden brown and cooked through.
Notes
Cooking time is per pancake, total cooking time will depend on the pan you use, or how many of them you use. I use two individual pans and cook two pancakes at a time.
