Ingredients
1TablespoonOlive Oil
1Yellow OnionFinely diced
600gChicken ThighsChopped
1TeaspoonGarlic Puree
1TeaspoonGinger Puree
1LimeJuice only
400mlCoconut Milk
3TablespoonsSmooth Peanut Butter
1TablespoonCurry Powder
1TablespoonTurmeric
1TablespoonChilli Powder
1/2TeaspoonCoriander
1/2TeaspoonCumin
2TablespoonsLight Soy Sauce
1Bunch Spring Onionssliced - optional
Instructions
Heat the oil in a large flameproof, non-stick pan or dish over medium heat on the hob.
Add the onions and fry for 5 minutes, stirring often.
Add the chicken thighs and cook for 5-10 minutes until browned, stirring often.
Stir in the ginger, garlic and lime juice. Simmer for 2 minutes.
Pour in the coconut milk and stir until any solids have liquified.
Add the peanut butter, curry powder, turmeric, chilli powder, coriander, cumin and soy.
Stir and bring to a simmer.
Simmer for 10-15 minutes until the sauce has thickened.
Serve with a sprinkle of spring onions.
Notes
This is quite a strong flavour. If it’s too much for you, add 300ml of chicken stock, made with one stock cube and simmer for around 30 minutes. Add more chilli powder or a pinch of chilli flakes to taste.
