I love these easy chicken and halloumi wraps. Super quick and easy and absolutely delicious. Perfect with homemade fries for a simple midweek dinner.

400gMini Chicken Breast Fillets
225gHalloumi Cheese
4WrapsAny kind is fine
Cooking Spray
1TablespoonOregano
PinchChilli Flakes
PinchSalt and pepper

Instructions
Place your chicken in a bowl and spray liberally with cooking spray (or drizzle over olive oil).
Sprinkle on a tablespoon of oregano, a pinch of salt and pepper and a good pinch of chilli flakes.
Cover and leave in the fridge for 30 minutes.
Spray a large baking tray with a little cooking spray and place on the chicken fillets.
Bake in the oven for 20 minutes at 180 degrees C (fan-assisted) until cooked through.
While the chicken bakes cut the halloumi into 1-2cm strips.
Mist a frying pan with cooking spray and warm over medium heat.
Add the halloumi strips and fry for about 4 minutes on each side until golden brown.
Spread wraps with tzatziki, add salad, 2 mini chicken breast fillets and 3-4 strips of halloumi.
Roll, either with both ends tucked in or an open end.
Notes
If you use large breasts, either slice before cooking or after. If cooking whole, make sure you cook for a little longer, and check that the middle is cooked before serving.
Grill or fry the chicken if you prefer.
