I love a good Bean Burger. While we obviously eat absolutely loads of meat I do enjoy veggie options too. When it comes to burgers, I much prefer a beanie burger to the more “fake meat” tasting choices. I worked for Nando’s for years and their bean burger is absolutely amazing.
Husband has been telling me about this version of a beanie burger for a while. I think he made something similar at a restaurant he worked at once. But, I had my doubts. Just on hearing the ingredients I thought it sounded a bit odd.
We’ve finally got around to giving it ago tonight as we’ve finally had some good news and fancied a date night. He was of course right. It’s gorgeous!
You Will Need
- 200g Mixed bean salad
- 300g Sweet potato
- 200g Chopped tomatoes
- 25g Plain flour
- 1tsp Paprika
- 0.5tsp chilli Powder
- 0.5tsp Mixed herbs
- Pinch of salt and pepper
Firstly, a bit of prep. Drain and wash the beans before setting them to one side.
Peel and grate the potatoes (much easier than I’d expected!!) into a bowl.
Squeeze them with your hands over the sink or another bowl to drain off some of the liquid that comes out of them. Then, sieve the tomatoes into a bowl, so you’re just left with the lumpy bits and none of the waterier juice.
Preheat the oven to 180 degrees and lightly grease a baking tray.
Next, place the beans, grated potatoes, tomatoes, paprika, chilli powder, salt and pepper and herbs in a large mixing bowl. Stir together well before adding the flour and mixing again. Get your hands in there to make sure it’s all combined. At this point, it should be a thicker mixture but it’s ok if it’s still quite moist.
Divide this mixture into 4 balls and flatten with your hands into a burger shape.
Shallow fry in a pan for 2 minutes on each side before placing on the baking tray and baking in the oven for 30 minutes.
We serve ours on homemade bread rolls with mayo, lettuce, tomato and cheese, with sweet potato wedges on the side and a giant glass of rose. But that bit is really up to you.
Super Simple Beanie Burger Recipe
- • 200g Mixed bean salad
- • 300g Sweet potato
- • 200g Chopped tomatoes
- • 25g Plain flour
- • 1tsp Paprika
- • 0.5tsp chilli Powder
- • 0.5tsp Mixed herbs
- Preheat the oven to 180 degrees and lightly grease a baking tray
- Drain and rinse the beans
- Peel and grate the sweet potato. Squeeze to drain
- Sieve the tomatoes, so you are left with the thicker chunks
- Combine these ingredients in a mixing bowl with the herbs, paprika, chilli and salt and pepper
- Mix together well
- Add the flour and combine with your hands
- Separate into 4 balls and flatten
- Shallow fry for 2 minutes on each side
- Place on the baking tray and bake in the oven for 30 minutes
