I love fish it. Everything from fish and chips from the chippy to sushi and fresh seafood from a beachside stall. Except for perhaps oysters. Which are absolutely vile. But, I’m awful at cooking it myself. If we go out and there’s a tasty fish dish on the menu, I’ll order it, but I do so little with it at home. When it comes to salmon, I’m a bit fussy. I only like it if it’s cooked well and in a nice sauce. On its own, I think it’s quite bland and has a really odd flavour. So, Pan Fried Salmon with Garlic and Lemon Butter wasn’t a natural choice for me.
But, I’m determined to try more new things and to expand my cooking skills. I also want to try more healthy meals, and to add more variety to our diet. I hardly ever eat salmon, or the asparagus I served this meal with, so Pan Fried Salmon with Garlic and Lemon Butter was perfect.
I must confess, it’s perhaps not quite as healthy as it could have been. I added quite a lot of butter. If you are watching your calorie intake, you may want to reduce it a little. But, honestly, I wouldn’t. It’s so lovely just like this. Just eat all of the butter and then go for a walk after dinner!
Pan Fried Salmon with Garlic and Lemon Butter is such as easy meal to make. I served mine with boiled potatoes and asparagus, and the potatoes took the longest. I didn’t start the rest until they were boiling, and they were still the last thing on the hob. The only thing is, you do need four pans on the go at the same time. So be prepared for a warm kitchen!
- 2 Salmon Fillets
- Cooking oil
- 100ml Vegetable stock
- Juice of 1 Lemon
- 1tbsp Honey
- 4tbsp Butter
- 2 Cloves Garlic – Crushed
- Chopped Fresh Parsley and Lemon Wedges to garnish
- New potatoes and asparagus to serve
I say new potatoes and asparagus to serve, you could do it with anything, but I thought these complimented Pan Fried Salmon with Garlic and Lemon Butter really really well. They also kept it healthy and are easy to cook, You don’t really need the lemon and parsley to garnish either, but it does add a little extra.
The salmon and sauce only take around 10 minutes, so remember to get your potatoes and asparagus (or other sides) on first, or you will be waiting for them.
To make the sauce, lightly fry the garlic in 1tbsp of the butter for a few minutes, stirring as the butter melts. Once the garlic is soft, add the stock, lemon juice, honey and the rest of the butter. Simmer for around 10 minutes, stirring often, until it’s reduced slightly. You don’t want it too thick, so if it starts to get to that point, simply remove from the heat.
At the same time, fry your salmon in a little cooking oil for around 4 minutes on each side. A little more if it’s a very thick fillet.
Serve straight from the pan, drizzling the Garlic and Lemon Butter over either just the salmon or the whole meal, adding a sprinkle of parsley and some lemon wedges to finish.
This sauce would make enough for four salmon fillets, so don’t worry about increasing the amount if there is more of you.
