Moist Banana Bread

I make banana bread all the time. Partly because I’m one of those people that can’t eat a banana if it’s a bit green but can’t have a spot of brown on it either. Meaning they’re good for about 3 hours. But also, because it’s the best way to be allowed cake for breakfast. It’s basically fruit after all!

There are of course about 6 million banana bread recipes out there. But, this one is in my honest and completely biased opinion the best by miles. If you want to have a go at my incredibly moist banana bread,

You Will Need

  • 3 Overripe bananas
  • 140g Caster sugar
  • 140g Butter
  • 1 Egg
  • 1 tsp Vanilla Essence
  • Pinch of salt
  • 170g Self raising flour
  • 1 tsp Baking powder

Firstly, lightly grease a loaf tin and preheat the oven to 180 degrees.

Next, mash the bananas. I love this bit. They don’t need to be totally smooth, a few lumps are fine. They just need to be mushy. If your bananas aren’t at the overripe phase but you are absolutely desperate for moist banana bread pop them in the oven on a low heat for about 15 minutes before mashing. Once mashed, set the bananas to one side for later.

Now, cream together the butter and sugar in a large mixing bowl until light and fluffy.

Then add the egg, vanilla, and bananas before mixing together thoroughly.

Finally, sieve in the flour, baking powder, salt and fold together well until you’ve got a smooth batter.

Pour into the loaf tin and leave to rest for 10 minutes. I don’t know why this rest makes a difference but if I don’t do it I find the finished loaf breaks up quite a lot.


Once your batter is well-rested bake in the oven for 40 minutes.

This moist banana bread is perfect with a cup of coffee, either for breakfast or as an afternoon pick me up if you, like me find it completely impossible to stay awake without a sugar boost at around 3 pm.

  • Preheat the oven to 180 degrees and lightly grease a loaf tin.
  • Cream together the butter and sugar.
  • Add the egg, vanilla, and bananas before mixing together well.
  • Sieve in the flour, salt, and baking powder.
  • Fold together until smooth.
  • Pour into the loaf tin and leave to rest for 10 minutes.
  • Bake for 40 minutes.


I bake my loaf cakes in a tin that's 10" by 5" and 2" deep.
