Healthy Breakfast: Turmeric Scrambled Eggs with Tomatoes

I love breakfast. But I’m bad at it. I get so bored of toast and cereal. I actually find cereal a little upsetting. You don’t buy one meal for dinner every night. Yet I’m supposed to stick to one box of cereal until it runs out?! I don’t think so! I don’t mind either of these things, in fact, a piece (or 6) or hot buttery toast and a cup of tea can be pretty perfect. But, I get bored.

The breakfasts I’d like to eat all of the time are American Pancakes, sausage sandwiches or a full English with 9000 hash browns. I eat one of these as often as I can justify. But, you wouldn’t want a giant breakfast every day.

Turmeric Scrambled Egg and Tomatoes

When I’m trying to be a little healthier (January!) I often skip breakfast completely. I know this isn’t healthy. But, I don’t tend to eat it until after school runs and drop-offs anyway. Which is normally around 10. So, if I’m cutting calories, it’s easy just to skip it and have an early lunch. But, when I’m going to the gym I need a good breakfast. My go-to is eggs. I love eggs. My favourite is always poached. But, I can’t do it. I’ve tried all sorts, but they just don’t bloody work. If Husband is in, he’ll do me poached eggs. If he’s not, it’s scrambled.

I love a Scrambled egg but again, they can get a little boring. So I like to add things to them. Often cheese! Or beans. Cheese, scrambled eggs and beans on toast is amazing! Another favourite is turmeric.

I really like turmeric. Such a lovely flavour with amazing health benefits and I’m not going to lie; I like that it turns everything yellow! Turmeric Scrambled Eggs with Tomatoes is a fantastic pre-gym breakfast. It’s healthy, filling, filled with protein to give you a kick start, and really really tasty.

Of course, another great benefit of Turmeric Scrambled Eggs is that it takes about 10 minutes to make. Even less if you use a microwave!


  • 3 Eggs
  • Splash of milk
  • Splash coconut oil (or cooking oil)
  • 25g Cheese
  • 1 Clove garlic – finely chopped or crushed
  • 0.5tsp oregano
  • 0.5tsp Sage
  • 1tsp Turmeric
  • 1 Large tomato – Chopped

Turmeric Scrambled eggs would also be great with peppers, and onions added. Especially if you had it as a healthy lunch.


Heat a little oil in a small saucepan. I used coconut oil, but any will do. Add the garlic and fry for a few minutes until softened. Reduce the heat slightly.

Then, crack the eggs straight into the saucepan, add a splash of milk and give it a really good whisk, without removing from the heat.

Add the sage, turmeric and oregano and grate in the cheese. Keep whisking until the eggs are cooked and tip onto a slice of buttered toast.

I like to warm my tomatoes, so I put them in the saucepan for a few minutes once the eggs are out. But, that’s totally up to you.

  • • 3 Eggs
  • • Splash of milk
  • • Splash coconut oil or cooking oil
  • • 25g Cheese
  • • 1 Clove garlic – Finely chopped or crushed
  • • 0.5tsp oregano
  • • 0.5tsp Sage
  • • 1tsp Turmeric
  • • 1 Large tomato - Chopped


  • Fry the garlic in a splash of oil for a few minute until soft in a small saucepan
  • Crack in the eggs, add a splash of milk and whisk
  • Add the herbs and grate in the cheese
  • Keep whisking until cooked
  • Tip on to hot buttered toast and add chopped tomatoes to finsih
