Halloumi and Mushroom Burgers

As with an awful lot of the food I make, this was out of a necessity to use some left-over ingredients. I had some salsa and Halloumi left from my Roasted red pepper and halloumi burgers that needed eating. They would be equally good if you substituted the salsa for some chilli jam, which I think works incredibly well with halloumi. They would also work well with homemade white bread rolls, which I usually do, but these halloumi and mushroom burgers weren’t planned.

I must say, this is one of the few things that my kids don’t massively like. The Girl is confused by halloumi. She doesn’t seem to realise that it is food and just keeps chewing for ages. The Boy doesn’t like mushrooms, again I think it’s a texture thing, they can be a bit slimy

We seem to be in a halloumi/vegetarian phase at the moment. So I’ll need to think of some other things to do with it. If any one has any recipes, please do share. I just can’t stop eating it!

Ingredients

  • 250g Halloumi
  • 4 Jumbo Mushrooms
  • 4 Bread Rolls
  • Homemade salsa
  • Lettuce
  • Mayonnaise
  • Oil

Method

Preheat the oven to 180 degrees.

Slice the halloumi into 8 equal pieces. Place on a baking tray with the mushrooms, and lightly drizzle with oil. I put the mushrooms stalk side down, but I don’t think it really matters that much.

Bake in the oven for 15 minutes, until halloumi is soft and starting to brown.

I layer them bottom roll, mayo, lettuce, mushroom, halloumi, salsa then top roll.

Be careful when you eat them, as the mushrooms get very juicy and ridiculously hot. I literally burn my tongue every single time I eat a cooked mushroom, and I never learn! So please, leave them for a few minutes to cool down.

I ate one on its own as a lunch, but would work well served with chips or salad.
